Making espresso to perfection can get really complicated. It takes talent and a lot of experience to master the fine art of making espresso, so in this video Kirby shows us why is it so hard and what it takes to make a classic and remarkable cup of espresso (or at least tries to).

So a couple of thoughts from a former specialty barista. Overall you've gotten quite far in the process. You're weighing your ins and outs, you distribute the coffee well and do a great job explaining. As you've already noticed the eureka grinder while good in terms of performance isn't really built for single dosing, but you're working around it well. Some thoughts for improvement though, adjusting you're dose will adjust the time it takes to extract your coffee, a 17.8gram dose will flow faster than an 18.3 gram by a decent bit, because of this I would suggest trying to keep your tolerance within +/- 0.2gr or preferably 0.1, this way when you're dialing in you're only getting the grind size as a variable and not the dose too. You did a decent job tamping but I would suggest (both for ergonomics and for your countertop) to put the portafilter level on the table with the spout/forks towards the edge of the table, easier to get a level tamp that way and saves the countertop, also you don't necessarily have to tamp that hard, the most important thing is that you're using the same amount of pressure. Good job and happy brewing, think about these minor details and you'll be an expert in no time :)

In Scotland we save the used grinds and give them to gardeners, they use them to propagate their plants, seemingly stops bugs. I do this for my friend.

Don't listen to the people who say not to use a scale. It's the best way to be consistent. Coffee shops don't use them because they don't have the time and make hundreds of shots per day so they are generally consistent. I'd recommend maybe getting a self leveling tamper and a needle distribution tool and maybe a naked portafilter to diagnose your shots. In This video I think you basically you just needed to make a larger adjustment. Also the grinders retention might throw things off if last shots remaining coarser grounds were mixing with the now finer grounds the adjustment may fully take place for the next shot. You may end up overshooting and going too fine as a result or notice after not making a change that it finally slowed down the flow more on the next shot. Basically messing with your adjustments or delaying them anyway.

Kirby, your dissertation on properly making an espresso shot is the best and most concise I have ever heard. Kudos man, you really explained something that appears to be very simple, but can at times be extremely difficult, in really the perfect way. Awesome! I think the inconsistencies in brew time might be due to tamp consistency and technique. Noticed it wasn’t always level - best to rest the angled portafilter on the counter rather than holding up or buy a tamp station - I think ecm do a decent one. Could be worth buying a calibrated tamper to keep consistency. Or maybe even a bottomless portafilter to see the flow of coffee and evenness of the tamp.

By the way, levelling the grinds with s leveler is great and takes away the guessing but what is most important is ensuring you are temping levelled as well, this will help with the channeling. The only way to ensure it is done properly is to look at the results after temping and seeing how levelled is your ground before putting the porta filter in the espresso machine. You seems to have missed this step.

Just let the grounds go in the portafilter and make a mound. You don't have to beat up the poor fork on the grinder. Buy a bottomless or "naked" portafilter because it is a training tool. You cannot see if you are chanelling or not with a dual or single spout. Grinding finer stops channelling but at some point it will be too fine. Then you will either have to up-dose or tamp harder or maybe both. Part of the journey.

The reason why I seek out specialty coffee shops for a perfect espresso is the same reason why I don't attempt to tailor my own shirts at home. That being said, it's a fun and rewarding hobby.

I do it at home. It only takes about a minute and it’s way better than any coffee shop anywhere around where I live. Kirby is just showing you how to set up the machine initially.

Your technique looks good! You have all the basics down, just need to fine tune. As others have said, I would suggest tamping on the table just so you have a level surface, I believe that portafilter is angled meaning you can leave the portafilter resting on the table and the basket will be perfectly straight for when you go to tamp (to avoid holding at an angle). Single dosing works well for when youre trying to nail in your grind, but once you have your grind where you want it in that 25-30 second range, you can definitely begin to fill the hopper more, about 1/4 - 1/2 of the way full. I personally really enjoy Hologram by Counter Culture, of of my favorite coffees!

Another method to calibrate your machine is to start finer and do small coarser increments. If it’s the first shot what I do is to grind 1-3g coffee beans, that way you won’t end up using the retained old beans.

You may have a grinder issue combined with old coffee beans. I'm a bit biased because I have a Niche 0, which I strongly recommend for espresso, but I'm also biased towards suggesting a Methos One, and/or a Eureka Helios. Both are far superior to that grinder with lower retention, less variation with grind size, and much less popcorning. You can hear your grinder popping some of the beans which would create a mix of grinds causing a variable size. So no matter how even the tamp, you'll still have more coffee one on part of the puck, than another.

For coffee, I'd recommend Dur Fres, coffee from Boon Boona Coffee (Coffee Coffee Coffee). I love the blueberry flavors, and so long as you don't mind a slightly more acidic shot, since it is a medium light roast, it's class. Other coffees I'd recommend is to go through Ryan at Bean Box. His coffee service provides some excellent selections that you can choose and play around yourself OR you can have them do it.

You chose an amazing grinder. Love it. As for espresso machine, I would rather choose and Italian, than a German machine, but it is you choice, and that is a high end setup Enjoyed the video. New coffee beans, mean time and shots to dial in, so, ... enjoy the journey 🤌 PS. Some grinders require you to have coffee in, while adjusting the burrs. Don't know if this specific one does

1 - push your tamp on a scale a few times until you get a feel for 30 lbs of force 2 - my consistently favorite roaster (i.e. the one who I like everything they make, whereas some other may do a coffee here and there I like even more sometimes) is Paradise Roasters.

Kirby buy you beans online from specialty stores, when you buy from the store you never know if they have the beans you like fresh or from a consistent source, and if you get your beans different every time that means you have to redo the whole grind size experiment all over again. It especially burns you when you have guests. With a premium machine like that, you need premium beans! Also pay attention to he pressure you tamper the espresso with, it didn’t seem like you pressed it hard enough(or maybe you did, hard to tell from the video) it’s another factor that can slow down the pull.

I am watching Hoffman and other coffee channels for a round half a year now. Read two books on coffee and especially on espresso. Summing up your video for me would go like this: spend thousands of dollars on a machine and additional hundreds of dollars on specialty coffee espresso, play around for hours and waste a ton of coffee and money just to MAYBE get a shot that’s enjoyable if you squeeze your eyes and forget how espresso should taste. Then use words like acidity and coursness and sound and look like you know what you’re doing. By the time you had a espresso it’s 13:30 lunchtime and if you try to play Italian you can’t put milk in anymore at this time of the day. My mourning routine is taking a khazar capsule of Nespresso and “ dialing “ in the amount I want to have in my machine. Beautiful dark roast espresso every single time. Then I steam my milk with the steamwand and pour myself a nice heart or Rosetta. Then I go to my home office and enjoy my coffee. All that took 2,5 minutes. Maybe I’ll grab a cookie with it. By the time I am done it’s 6:45 in the morning. At 10 I’ll do the same again if I can. While with those expensive machines I would have to play around every single time I change the coffee. This is not for coffee drinkers. It’s for coffee makers. I now know that for now I am staying with Nespresso. Thanks Kirby.

Generally I wouldn’t disagree... I was pretty happy with my mocha pot. But it is fun to tinker around some mornings (not when I’m in a hurry) and to taste some of the different flavors that you’d otherwise never taste

I don't drink espresso, but I would think that the tamping pressure has as much to do with the flow as does the amount of ground beans and the grind.

For a pod machine think most people say Nespresso is better but you can make much better coffee with a real espresso machine fresh coffee and a good grinder.

Thank you for showing your true journey and not jumping to hey look how easy it is. .I'm getting the same machine and hoping I can save some beans by following. Good tip below regarding very accurate measuring after grinding and dropping the single dose in idea. Although I believe Eureka sells a bellows hopper (called Blow Up) , below is the link. It will very much assist your machine and take it nearly to a dedicated Single Dosser, only tip I'll give from what I have seen. It works best with light tapping. You know he would use that to clean out coffee grinds from the portafilter and grinder, etc.? I use a thick quality painter’s brush for that, same purpose. Keeps me from creating piles of cleaning cloths from just some espresso brewing. The cloths get way less dirty after a first brush into the puck tray. Nice video Kirb! Also have the Synchronika (with a compak grinder) here.

I have a professional machine at home. Once you get it dialed in once, it only takes a minute. I make way better coffee at home than I can find at a coffee shop anywhere around my city.

Exactly, I have that exact machine at home (ECM Synchronika) and the Ceado E37S grinder. Once you have it dialed in it’s incredibly quick. As long as the machine is warmed up I can pull a double espresso and steam some milk for a latte in like a minute and 30 seconds. Far faster than driving out somewhere, far cheaper (excluding machine cost lol), and far superior than what you’ll find in most cafes.

Nice video Kirby. May I suggest that you check out James Hoffman’s RU-vid channel. He’s a world class award winning barista and a great teacher. If you’re having retention issues you should look into The Niche Zero Grinder. Jame Hoffman and Dave Corby have done extensive reviews on this grinder. I have one on order! Of all the times I've been to Italy I never once had a bad cup of espresso. I also never saw anyone of the baristas use a timer or scale. Grind the beans fine but don't tamp down too hard. Yes that's what's slowing it down. Get rid of the scale and don't look at the timer. Get feel for it instead, It may take a few days but you will know intuitively when everything is just right and you will never make a bad cup again. Use the force Kirby, let go! Trust your feelings. My favorite coffee is from Justcoffee.com. Organic fair trade and roasted to order.

Kirby, you just bought an espresso machine and all of the sudden you are an expert giving lecture on how to pull shots???? Really... you are over complicating your process by a mile. You wanted to know what to do differently? Here it is: get at least 1 kilo of beans from a local roaster, that way, once dialed you will have enough to play with and will not have to redial all the time for a new bag. Second, a double is 18 gr in the porta filter, 25 seconds and 2 oz in the cup. Brew ratio might be good but you’re not there yet. What matters is those metrics, 18 gr, 25 seconds and 2 oz that is the size of a double. Double are measured by volume not weight. Fill your hopper and weight what comes out. Wasting time measure what goes in the hopper will slow down the process and get old fast.

Measuring by weight is more popular nowadays. Also 25 seconds may or may not yield the best taste for a particular type of beans. While I do believe his lack of skill is apparent but brew time is not something absolute.
