Learn how to make the best gluten-free bread! In this video we’re making an easy gluten-free sandwich bread recipe! It's also dairy-free! The recipe is super simple and uses basic ingredients! This bread can be sliced and enjoyed on its own, used in sandwiches and you can also freeze it. This is the fluffiest and tastiest gluten-free bread I have ever tasted and believe me I have tried many! Even my boyfriend who isn’t gluten-free loves this bread and always asks me to bake a new loaf!
Gluten-free breads in the grocery stores are quite expensive and often a bit dry! This bread is every coeliac’s and gluten intolerant’s dream! It’s so delicious and not dry at all and actually quite easy to make😍
In this recipe I used all purpose gluten-free flour mix, which is basically a mix of rice flour, corn starch and potato flour☺️ Pretty much any kind of all purpose gluten-free flour mix should work well in this! If your flour mix already contains psyllium husk, you don’t need to add any psyllium to the dough. Same thing if you are using regular non gluten-free flour, no need to add psyllium, it’s only needed for gluten-free baking. The loaf pan I used was: 12 x 20 cm / 5 x 8 inch
Ingredients:
1 1/2 cups warm water (360 ml)
4 1/2 teaspoons of dry yeast (11 g)
1 tablespoon psyllium husk powder (if your flours don’t already contain it)
2 - 3 tablespoons maple syrup or honey
3 tablespoons olive oil
2 teaspoons salt
2 - 2 1/2 cups all purpose gluten-free flour mix (480 - 600 ml)
2 egg whites

Thank you for sharing this recipe. I was just diagnosed with IBS myself. I've been struggling for 8 years. Doctors had no idea what was wrong with me. They probably thought I was crazy. This is the first gluten-free bread recipe. I want to eat it all and not throw in the trash. I'm so amazed! It's amazing!! I used King Arthur All Purpose Gluten-free flour. My family that isn't gluten-free loved it as well.

I self-diagnosed with IBS a few years ago. By eating gluten-free and by doing low fodmap for a while I actually began to get a lot better. Now I am mostly just GF and no longer follow the low fodmap at all, but it really did help me when the symptoms were severe. I love KA AP GF flour. I will try this recipe with that one, according to your recommendation. Can't wait to try it!

@@patriciacz8622 I did the low Fodmap diet as well in the beginning. My stomach specialist thought it was a good start. I'm doing so much better as well being gluten-free. I haven't been sick for a few weeks now. I'm also dairy free. I hope you enjoy the bread as well. I do 2 table spoons of honey and one table spoon of sugar.

I have gluten free flour but they don’t have psyllium powder in ingredients and I don’t have it, 😢can I do without it, this all purpose flour cup 4 cup, isit good for the bread? I want to make first time

This bread has been perfect almost every single time! I've made it over 10 times now, with only 1 time it overspilling in the oven. Everyone that has tried it absolutely loves it and cant believe its gluten free. highly rec!!!

My first loaf didn't cook through but I got to taste enough of the edges to know I wanted to try it again. Second loaf, used 3C flour, 2t baking powder, 3T sugar instead of honey, added to warm water before yeast to activate, baked @ 350 for 50 minutes. Perfection! Thanks for a good bread recipe without the sticky slimy Xanthan gum.

This bread is great. The only thing I did different was I used parchment paper in the pan to keep from sticking and having to wash the pan. I was skeptical at first because it did not rise the way I thought it would, but it did once it was baked. Absolutely yummy.

I made this yesterday it was really good. I change a little bit instead of using all maple syrup I use 1Tbsp of sugar and 2tbsp of syrup. I also put a 1/2 cup of chopped walnuts and brush with egg whites. on top i sprinkle with salad topper oh boy it was so delicious. Thank you for sharing the recipe😘

Thank you for this recipe! I've been on a gluten-free diet for 8 years now and I've just bumped into your recipe two days ago. I made it this morning and it looks pretty much like yours. I used my own gluten-free flour mix(rice flour, tapioca, potato starch) and I was afraid that it wouldn't work but it worked very well. I have never had such a good recipe. Thanks a lot!

@@alinamjf I used mix from Mery's Nest (two cups of white rice flour, one cup of tapioca and one cup of potato starch) ru-vid.com/video/%D0%B2%D0%B8%D0%B4%D0%B5%D0%BE-nFRcUzS7qN8.html. I added two cups first but the dough was too loose so I added more but I didn't measure how much more it was (to the point when the consistency was the same as in the video). I didn't use all the amount. I also will experiment with whole grain flours, I often use buckwheat flour but not everybody likes its taste. From my experience I can tell that you should use about 20-30% of any starch like potato starch, tapioca or corn starch or mix of them to get pretty elastic structure. Of course the psyllium husk is very important as well, without this ingredient the result will be much more different.

She does say 4 1/2 tsp of dry yeast and it's typed on the recipe card with all the ingredients as 4 1/2 tsp. That is 2 packets. I used the correct measurements in he recipe and it works. I did have trouble with it rising when I doubled the recipe and used a longer Pullman loaf pan and I looked it up. It could have issues rising uncovered on the counter if it's cooler in your home. I was preheating my oven, so I just covered it with plastic wrap and placed it on top in the stove and it started to rise just fine.

Sooo good! Even though my first loaf was slightly underbaked, it was heartily enjoyed by by the GFers in the family! My daughters got the recipe and both plan to make it. I used honey and sunflower oil. I don't eat GF normally, but this bread was really the best I've tasted.

This Bread turned out great! I added an extra half cup flour, bobs red mill gluten free flour because the dough was really wet. The extra half cup didn't make much difference...still very loose. But it seemed to wook out fine.

OMG I just made this bread with slight modifications, and it was super soft, chewy with a nice crust. Changes were: 2 tsp instant dry yeast, 1 tsp baking powder, 2.5 tbsp psyllium husks, 3 tbsp honey, 3 tbsp dry mixed herbs. As soon as the bread is out of the oven, brush all surfaces with olive oil and let cool before slicing.

@@tammrathomas5387 If you don't have psyllium husk, you can use the same amount of xanthan gum as long as there isn't any xanthan gum in the GF flour you are using. Check your label.

a few things to add. higher altitude will mean slightly less rise "time" but still look for about 2x rise. you also may need to increase the cooking temp 1 degree per 500 feet above sea level. but i do have a question, many gluten free 1for1 mixes, etc. have xantham gum. This is an important distinction because not all blends have it. Is this important in this recipe or does the husk take care of it? I tend to use the bobs 1to1 mix which has some xantham.

I read that Bobs red mill states in their website that their 1 to 1 gluten free flour doesn't do good in yeast recipes ...... I have only used their gluten free 1 to 1 flour in cookies.

You also can lightly cover and let the dough rise in the refrigerator over night; it should rise allot more.

Try proofing your yeast with the sugar first…don’t add the salt right away(I was taught that salt kills the yeast) 🤷‍♀️, mix it in with the dry mix. That is how I make my bread anyway 😊

I learned that it could be to cool in your home when it isn't rising until being out into the oven. I experienced this when I doubled the recipe to make a longer loaf. While preheating my oven, I just covered it with plastic wrap and set it on top of the stove and it began to rise great and then I popped it into the oven and it was a perfect 206° @ 45 mins

Is the maple syrup/honey just for sweetness or does it have another purpose? Reason being is my normal yeast gluten bread recipe does not contain or need sugars at all (water, yeast, flour, salt, oil) and I don’t like sweet bread. The US seems to like their bread sweet

Without sugar it slows down the yeast activity the syrup or honey is just a more natural replacement suggestion. There are other replacements for sugar than just these of course. I believe she is just following what she likes. You most likely can get away with omitting the sugar it just might take longer or may cause a fail in the bread rising as sugar with yeast creates carbon dioxide ( responsible for the bread rising) You can try warm water and wisking the yeast I have seen it but taste may be bitter. Never hurts in trying 😊 hope this helps.

The psyllium is an absolute game changer for replacing gluten! Just discovered this, and it's been around for years. Ugh. Better late than never. I'm low carb so I can use almond or pecan flour. I'm trying pecan today.

I finally got around to trying this. I'm keto and use a flour mix developed by a prominent youtuber that calls for bamboo fiber and pecan flour, etc. So we shall see how it turns out. My dough was not as thick as yours despite adding half a cup more flour and another tablespoon of psyllium sprinkled into the dough. I knew there would be adjustments since I was using a keto flour. I'm excited to see how it comes out! I've tried MANY breads. I hope this is "the one."

So it's really a good keto friendly bread when using Victoria's keto kitchen flour w/ bamboo fiber. I think I'm going to try 2 and 3/4 cup of flour this time and use parchment paper to prevent sticking. I stuck to my greased pan so bad I couldn't get it out and it tore from the bottom crust. Otherwise it makes a great keto bread.

Mine didn't rise for some reason and I struggled to get the psyllium husk powder to combine with the yeast and water. I ended up blending the psyllium husk powder with warm water prior to adding it into the yeast, but it still didn't rise when I let it set for the 30-45 minutes. Might try again and let the yeast activate with some sugar and water prior to mixing in the psyllium. It's a lot more complicated that I expected 😅

If your home is cooler or your at a higher elevation that could be a factor. It is a really simple recipe compared to most I've tried. Make sure when you first start that your water is at the temp that your dry yeast packet says but she suggested 107°f mine said 120°-130°f before you mix your yeast in with a whisk. Don't forget to let it sit to gel up for 10 mins after adding psyllium husk powder before mixing in the rest. I had to cover mine with plastic wrap and set it on top of my stove while my oven preheated, after everything was mixed and spooned into the baking dish. Just pop it into the oven for the 35-45 mins. Internal temp of the bread should be 205-210°f when done. I had to remove my loaf to cool after a couple mins out of the oven and then cook completely before slicing. If you don't have a cooling rack, you can remove the oven rack you won't be using in the oven before you preheat your oven and use that as a cooling rack. I hope this helps on your next attempt to be successful

Thank you for the amazing recipe! It tasted great!!! We did everything the recipe told us to, except we added about 1/2-3/4 cup more flour because we felt the dough was way too sticky - would this be why the bread did not rise nearly as high as yours did in the video? Is your dough normally quite sticky when you transfer it into the bread pan?

Did you say corn beef mix (flour)? Also degrees is not a MEASUREMENTS...FAHRENHEIT or CELSIUS is the measurement. Psyllium can give people the runs ...so you have to use minute amounts and slowly increase amounts once body gets used to it. Nice looking bread.

I think it is: all purpose gluten-free four mix, also bake at 200 Celsius degrees (390 in Fahrenheit) for 35-45 minutes.

I made this using ordinary all purpose flour and added the psyllium & used only 1 tsp salt but while it did rise it was spilling out over cake tin before baking allowing to rise, but did bake well . Don't you think that half that amount of yeast would suffice? eg 7grams & less oil?

I've been trying to make a gluten-free brown bread with molasses and didn't know if you've ever tried that. When I read about brown breads, it stated that molasses is used in New England breads. What is your opinion on molasses?

Any egg white replacements? We have an egg allergy and the egg replacement powder I used previously thickens the batter too much with the recommended substitute amount.

All bread dough will need water. Just put instant yeast into the flour, use the same amount of water and follow the rest of the recipe.

I just try and the taste and texture is so good. I used 624 g Red mill gluten free flour instead of 400. And it raised almost double in 30 mins. However, it didn’t raise while baking 😢 Do you have any suggestions?

My son was just diagnosed with celiac so I'm going to try your recipe, it looks great! I've made a lot of not gluten free bread in the past so I was surprised to see this calls for a lot more yeast than I'm used to. Is GF bread generally this way? Can I reduce the yeast and just proof longer? Thanks!

Hey! I've made this gluten free bread following your recipe step by step, however, my dough was not nearly as "thick" as yours and I ended up putting like 4-5 cups of flour instead of 2-2.5 like you suggested. Do you have any idea why that happened? Also, maybe you can suggest a specific gluten free flour mix that you used for this bread?

hi beautiful, thank u for all the videos, recipes & info, very very helpful indeed. I hope u can help us with our dilemma, recently we got an air fryer "oven" with three tray shelves, it's heat plate is from inside top, like a broiler, no hot plate at bottom or grill. struggling when making the sandwich bread loaf, as it seems it heats & brown the top while bottom & sides still white & not done at all. I tried to take the pan half way & filp the loaf upside-down, then I repeat the same for each side. it is uneasy & a haste to say the least. I can't cover the loaf pan with foil as it rises as it is heated & also aluminum is not healthy. what do u recommend we do? Thank you 🙏🙏

I did make this bread and it is delicious! I am still having a problem with not enough rising. My bread is still a bit heavy....I am using SAF red yeast, a gluten free flour mix and I substituted the psyllium powder with flax meal...Oh and I think the amount of yeast was hard on my system...any suggestions??? Thank you so much for this recipe!!!

Sorry to say you can't sub out the psyllium husk powder. It's essential.

@@Cessnagirly Yes, in some recipes you might be able to substitute for psyllium husk but those are always denser products. If you want light and airy, and want the same results as the video, you need the psyllium husk. Trust me I've been baking GF disasters for years trying to substitute ingredients but have learned well to trust someone else's recipe!
