How to make the worlds best Flautas - Chicken & Avacado Cream!
Recipe:

For the Flautas:
Vegetable or canola oil, for frying
1 tablespoon butter
1/2 small red onion, diced
1 jalapeno, diced
1 garlic clove, minced
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper 1 rotisserie chicken, skin removed and meat finely shredded
1 cup salsa
1/4 cup freshly chopped cilantro leaves
1 cup shredded Cheddar/Monterey jack blend
1 lime, juiced
Salt
16 (5 to 6-inch) flour tortillas
2 cups shredded iceberg lettuce, for serving
For the Avocado Cream:
1 very ripe avocado, halved, pitted and flesh removed
1 (4-ounce) container sour cream
2 tablespoons fresh lime juice

LIMES: Before cutting, roll them on the counter top pressing down to get more juice. or put them in microwave for about 15 secs. edit: some limes just don't have juice. if the recipe calls for juice of one lime, I always get a few.

Dave If you want to soften up an Avocado the fastest way is to place it in a paper bag with a ripe banana it will soften up in about 8-12 hours depending on how ripe the avocado and the banana are. I am an Old School scratch cook taught by my mom, and she was a fabulous cook . This really does work!😁

I use a HAND MIXER for shredding chicken. Works EXCELLENT. Also use it for mashing potatoes.

those aren't mashed potatoes, those are whipped potatoes, but it does make it easier. I kind of like some chunks in mine so mashed for me.😊

Those are the most beautiful flautas I've ever seen. I like the larger tortillas, less rolling. I hate it when I'm missing that one ingredient. I keep lime and lemon juice in the fridge, just in case. I also sometimes keep cilantro paste because cilantro goes bad so quickly. I almost never deep fry but I might now. I love your videos. Just a guy (not a professional) cook, just getting gutsy in the kitchen. That's how I learned to cook. I got tired of Hamburger Helper and fish sticks. Wonderful to have your daughter in there too. Keep em coming.

They look delicious. Just a tad spicy for me, so I would cook with a little less. You put a lot of work into preparing these even if the chicken was bought. Teaching your daughters how to cook is very important. The only concern I had was that I hope you remembered which ones were low carb for Tina. Good job Dave!

I will be trying this one for our next family taco night. To shred chicken I use a mixer. Works really well for me. I don't wash an onion, after peeling, it is clean unless it is a green onion with the green stems, they hold dirt and grime. I keep a pure lime bottle of juice in the fridge incase I need lime juice, same with lemon. As long as it is pure juice, it works great. There are also "pure lime and lemon" packets, they work also in a pinch.

Dave you do really make a recipe look yummy and doable! I In the same department you got the whole chicken a lot of stores sell chicken "off the bone" by the pound - no bone no skin no feathers! Next time you are peeling and skinning a chicken - pull off the legs and split the breast. It will be easier to find places to grab and pull off the meat. And yes using fingers is best!

Made them and they are delicious! I learned during frying to use way less oil...more of a sallow fry to prevent them from rolling to one side. Thanks for the yummy dinner idea!

Having the onions get a little browning can be very good for flavor, but it was certainly good that they instructed to wait on the garlic. Garlic will get bitter if scorched.

YUM 😋! Looked delicious! I think the recipe was a little short on instructions- but you did fine! A lot if stores sell chicken off the bone- you would just need to shred it- and fingers are the best way. Anna was awesome as your assistant! You could do the whole prep the chicken step ahead while t h e chicken is still warm and then just refrigerate it until you're ready to make the flautas! . You were quite serious about this recipe- glad it came out well!

Use your hand mixer to shred chicken, (in a big plastic bowl). So much easier! These look so good !

If you mash the avocado first by itself using a bean masher and then add everything else it will go much easier. Kind of like making gravy, butter and flour, browned and made into a roux, then slowly add liquid.

I’m a huge animal lover who eats meat. And I own a small farm. Everything becomes a pet here haha! Can relate to your concern about grossing someone out if they love chickens. Chickens are so cool. If you want to keep the filling from falling out when deep frying you can fold up the ends like a burrito, or fry them in less oil in a waited pan in less grease.😎

If you run a little low on lime juice you can use the zest which is the green part before the pith (the white part) and save yourself s trip to the store.

You can heat a little oil in a frying pan just to barely hot. Then dip your tortilla in and back out immediately and it will be soft. Then roll it with the chicken filling and if you put the side that has the end cut under neath and it will stay together without having to put a toothpick in it.. These look good. Mine are much more simple. I use leftover cooked chicken mixed with salsa. But these look really good! oh, also, I fry mine in a frying pan with about 1/2 inch of oil and just turn them to cook on both sides. :)

I abuse my cayanne pepper. I pretty much always double or triple it in any recipe. I usually double the cumin too because I love the aroma of cumin. I also often use the seeds in jalapeno and sometimes substitute a hotter pepper.

I buy a big package of chicken breasts, bake them to done, then cut up to small shredded pieces and stick it in the freezer for recipes such as yours that needs shredded cooked chicken. Soo much easier.

The avocado pit is the seed. Yes, they do sell shredded chicken in the deli section of the grocery stores.

I actually don't do nearly that much oil. I do enough oil to cover half the flauta, them flip them when one side is done. Then it can't float and twist the wrong way.

Yes, you can grow an avocado tree from the seed. Might be a good project for the kids.

If you buy an unripe avocado, place them under a plastic bowl turned upside down , and in a day or so, it will be soft and ripe.

The oven after crisps them up slit it’s a trick . I make flour tortilla bowls for salads . Fry the tortilla just til one puff then place them on an oven safe bowl or foil ball bake for 3-5 minutes on 200-300 wallah lasts for days always crispy ! Just fried in oil will make it soggy . The oven cooks off extra oil

Its much easier & faster just to cut up, or pull the parts off the chicken, and then take the skin off the parts.

Of course you get a tree! My daughters plants her avocado seeds n has beautiful plants! No avocados! She sticks 4 toothpicks all sides n hangs in water n top out! When it sprouts she plants! Some are 3 ft!

Ppuut lime in microwave for about 10 seconds then roll to get as much juice as possible without a reamer.

If you put a lime in the microwave for 5 seconds or even 10 seconds and then roll it on the counter juice will come flying out of it as you cut it.

Our Sam’s Club is still $4.98 for a huge rotisserie chicken. 😍. And to shred chicken I use my hand mixer. Suuuuper easy hack!

Flour tortillas??? Maybe it’s bc I’m in TEXAS but… Shouldn’t you use CORN TORTILLAS 😬 also way too big for me, flautas are supposed to be skinny for hand dipping. Also I wouldn’t put cheese inside, I dip in queso 😊

If you fry them in a frying pan they won't roll. And when you roll them you can kind of flatten them out so when you put them in the pan they don't roll

SALT: If you're using Morton's (rather than Kosher, etc.) use less salt. Morton's is smaller granules so you could end up with more salt in your dish than you intended. Taste as you go. :-)

It would be much better if you had everything chopped and measured before you start the video, i dont like watching people chopping up onions etc and i find a recipe easier to follow when its done like that, i dont think i am the only one either
