Here's our authentic Italian recipe for Tiramisu! To be completely honest, I used to hate tiramisu. It was always soggy, the coffee flavor was too strong, I was scared of raw eggs, etc. Then, Alessio made me his authentic tiramisu from Italy and it changed EVERYTHING. No more mistakes or yucky tastes. This is the only tiramisu recipe you'll ever need and we made it super simple.

6 eggs (room temperature) 1 cup sugar 1/4 cup sugar Cocoa powder Lady fingers (about 30) 3 cups coffee 2 8oz tubs mascarpone cheese 1. Make coffee and cool in a container to dip the lady fingers in later. 2. Separate whites and yolks into 2 bowls. 3. Mix the mascarpone, 1/2 cup, and 1/8 cup sugar into the egg yolks until creamy. 4. Beat egg whites on low/medium setting with remaining sugar until stiff peaks form. 5. Fold the mascarpone mixture gently into the egg white mixture until combined. 6. Put a thin layer of the cream on the bottom of a 9x13 pan. 7. Dip lady fingers in the cooled coffee and lay a single layer into the pan. This may take about 15. Only dip one side of the lady finger and take out quickly! 8. Use a spoon to spoon a small amount of coffee over each lady finger. 9. Spread a layer of cream then repeat another layer of lady fingers. 10. Add your last layer of cream on top, then sprinkle top with cocoa powder. 11. Cover and chill in the fridge for 24 hours then serve.

OMG you lovely people are fun, hilarious and inspirational to say the least. I worked with a Sicillian family back when I was 16. They taught me much about the Italian food but not Tiramisu. I got to taste it for the first time in Rome back in 2015 and I fell in love 💚🤍❤ We love the way you have fun with each others cultures, very much like we were being English and Canadian. You two remind me so much of my husband and I. He is of Italian descent but was born and raised in Argentina. He is my or “mi amorcito”. We also recently moved to Tennessee and are discovering Southern food. He is not a fan so far because he thinks everything is fried. He does love biscuits and banana pudding, though.

When combining the yolk/cheese mixture with the Italian meringue you should add a bit of the meringue to the yolk/cheese mixture first to temper the yolk/cheese portion. It will then fold into the rest of the meringue much easier. This is a classic technique when making a soufflé. A little Marsala wine in the coffee would add a bit of extra richness. Use a better cocoa powder than Hershey's. Droste and Valrhona are excellent brands. Don't cover it with aluminum foil, use plastic film instead.

Ciao Alessio, la goduria di veder qualcuno preparare il Tiramisù è seconda solo a mangiarlo. L'unico passaggio diverso che faccio è lo strato iniziale, io parto direttamente con i savoiardi e non la crema che mi pare quasi impossibile da estrarre con la paletta se messa sotto. Ma in ogni caso preciso e 100% italiano come tutte le ricette che porti.

Ciao Carlo! sono sempre partito con lo strato di crema e credo che da quel tocco in piu alla base del tiramisu perche' cmq la crema entra dentro al biscotto e si unisce al caffe! ovviamente e' una sensazione mia poi mi sbagliero ed e' uguale anche senza crema alla base! cmq ti ringrazio per il messaggio fa sempre piacere sentire italiani quando si vive all'estero

I'm no stranger to making tiramisu but no recipe has EVER turned out as well as this one!! I made a few minor changes: I didn't have espresso so I just used strong coffee but it's just not the same using coffee instead of espresso - I'll have to invest in a Mokapot for next time to get the full, deep flavor espresso gives. Also I got nervous the sugar remained granulated and didn't dissolve, but after whipping in the mascarpone it dissolved just fine. Otherwise this turned out great! Even my parents who are harsh tiramisu critics were impressed. Thank you for sharing such an amazing recipe!!

So happy with this! I always come back to the video even though I’ve made this recipe a few times. I’m Brazilian and I’ve been living in the US for 20 years. My nona was from Treviso and I thought it was really cool for Alessio to say tiramisu was original from there. Best tiramisu recipe!

Thank you for posting this recipe! I've searched for tiramisu recipes in the past and ended up closing the browser once I started coming across recipes that called for cream cheese. I'm not Italian and even I know cream cheese in a tiramisu is appalling lol so thank you for this tried and true recipe!

This is the tiramisu I make at home in Romania. When I go out and order tiramisu it's always with whipped cream which is good but not tiramisu. Congrats🎉

Several Italian chefs add heavy cream to their Tiramisu. Gennaro Contaldo is one, and Gino D'Acampo is another. D'Acampo also adds ameretto liquor. I am partial to Jesse and Alessio's version, since it's the original recipe from Treviso and because it is absolutely delicious. This is the only recipe to use!!

Thank you for sharing!! I made the “cream” version last year, thinking that was the right way, but it was much too rich for me. This seems much lighter! We are visiting Rome in September, so I am determined to make YOUR tiramisu before we go so I know the right “standard” to compare to when we taste it in Rome! Thank you so much! :) do you think you could have gotten away with just 2 cups of coffee instead of 3, since you had a lot leftover?

This is one of those very few recepies where actually it doesn't matter wether your eggs are streight from the fridge or on a room temperature. Cold eggs can ruin the proofing in baking, but for everything else, eggs streight from the fridge are OK.

I use grinded up amaretto cookies instead of chocolate powder. Plus use 3 liqueurs brandy, Marsala, and vermouth.

If you add cream of tartar to your egg whites, it stabilizes them and prevents them from breaking. You should still fold them to keep them from falling. I would try very hard to use real mascarpone, but a decent substitution would be cream cheese (Philadelphia). I would love to see you both with the Pasta Grammar couple (Eva and Harper)! Collaboration video would be great!
