Excellent job! Always eat Akpan but never seen it made. Love it with pepper sauce and crispy fried fish. Now, you have triggered a serious craving for some Apkan. My friend here in the USA from Bamenda, Cameroon called what looked like Akumé, fufu. In our part of the world fufu is made from yam and/or cassava. I hear the same in your narrative. It's all good!
