Tomato paste (if used) and the spices must be added to a mix of onion, ginger, garlic and chilies to fry in a moderate amount of oil before adding anything else! That is the base for every Indian curry.
Don't forget the bay leaves, curry leaves, star anise, mustard seed, and other spices most Indians use to really pump up the complexity and aromatic nature of the base!

Nah man, I like vegan food and this is a shit recipe. You need all the flavors to cook and sear more in a dry pan (with oil, not water-based shit like coconut). Brown the spices, the onions, the tomato paste so they get seared and tasty before you add the liquid.
I mean, he did a pretty amazing job here. After all, it's amazing that he somehow comes off as less professional than a guy who sang though half the recipe, and more tired out from cooking 1 dish than the guy who prepped a better curry with 2 sides and a shake.
You need to fry the spices in oil before anything else, then add onion, garlic and tomato paste. That first step is called "massala" or "chauncing" :) basic indian cooking
Compared to the last curry episode, the curry itself looks less well executed, and the presentation seemed a lot less professional. And considering that both are vegan curries executed by amateur chefs, it seems reasonable to compare them.
Looks good but I also add to mine: diced carrots red lentils chick peas Also I used to cook it like this, adding the spices after the liquid and only recently started actually frying the spices in oil before adding the liquid and holy shit it makes a huge huge difference in flavour. You can save money and use way less of the spices if you just fry them first!

Some time ago i lost a bet to a vegan friend of mine, and had to be vegan for at least two months. I am now 8 weeks in and im starting to regret it less by the day. Im not doing it because i care for the animals or some noble stuff like that, i just think/feel that it is alot more healthy. I don't know what makes omnivores and vegans hate each others so much, after all it's just a dietary choice.

I have no negative feelings towards vegetarians and vegans. I love asian food, i'm gonna eat it every now and then. MY problem is with the people that CLAIM to be one. Pompous and arrogant. They tend to think they're "better" than people that eat meat. That is what i don't like.

I clicked with the expectation that the dislike and bitching will be a lot on this one, simply because of the title. You realize some people are vegans and would like to see recipes online as well.. They are just offering recipes for all diets. Get over yourselves.
He isn't a chef, we should probably know that, its how he does it. The series isn't a how to from a chef, they are featuring a bunch of reg folks and the meals they cook. The comment is under this vid, but there have been a series of vegan recipes on this channel that gets a lot of hate. Point taken however. NB. No 'recipe' can be done wrong if it isn't a traditional recipe, that's the beauty of cooking, if in the end it tastes good, and is good.. then its a win. We humans love the boxes we make ourselves slaves to.
I just made this I roasted the spices first with onion I did everything… but I did the spices first then when the potatoes and onion and garlic looked to my liking I then added the coconut milk and cilantro but I added chili powder and it put everything together for me I also added ginger when I was frying the spices but delicious 😋
garlic hints: -pull out the central stem, so your breath is alot less stinky -if garlic cooks for 90min+, you can eat 2 fists of garlic and won't get a stinky breath, not even a tiny bit x)

I can relate to the story about the lizard so much. When I was a kid a crushed a baby birds egg and I felt so guilty about it. I became a pescetarian years later. I wonder how much that had to do with it
Curry requires garlic, onion and ginger... Holy trinity... You can fry the onion afterwards... There are ginger and garlic curries using tomato as part of the holy trinity... But ginger is always part of curries. Also you need oil and chilli, but that chilli bit is imported South American... Prior to the introduction of chilli curries were made with pepper, however very few pre 1300 Indian recipes have survived. Same in Thailand and Iran, as chilli pepper caused a food revolution... Chillis apparently preserve food, and why it's so popular in Asian cooking... Even though we can thank the Latin and South American natives for that gift...
I would have add the spices after the onions then the tomatoe paste. The coconut milk I would add at the end because it becomes oil when cooked for too long....but that s just me!
Most curries are vegan anyway. Rather than vegan, the curry should be labelled with the main ingredients. Like pea or potato. Also with an "indian" style curry, the tomato paste would have been cooked out with the onions first.
It is really good to consume turmeric with pepper and some fat (coconut milk is good), but I have heard that you shouldn't eat more than 2 teaspoons of turmeric a day. Just be careful! ☺
You want to un-sour the tomato paste first, you do that by putting it into oil together with the onions. This way you keep the tomato flavour but lose the super sour flavour, which is cooking 101.
