PLEASE READ: There have been a lot of comments referencing the fact that the alcohol will burn off. I can assure you it does not, alcohol burning away during cooking is a myth it would take around three hours of cooking to burn off all the alcohol in this recipe.

However I am aware of the lolly's low alcohol content, these are fun treat and really delicious, I wouldn't recommending using these to get hammered, it's usually quicker just to drink the vodka.
Ingredients:
Vodka 1/4 pint
Powdered glucose 1 tsb
Sugar 450g

I made this with my friends and it came up without almost nothing of alcohol. It was just sugar, even though we added more vodka at the end. Can anyone explain me how to do it right? Please

I was thinking the same thing. Alcohol burns out at about 173 degrees Fahrenheit so...if I am going to try this the alcohol should be added last when it's about 168 degrees Fahrenheit. The

That's what I'm saying. the alcohol does evaporate once you boil it, granted not a lot. The question was whether or not the alcohol would evaporate. The answer would still be yes, mainly because a sizable portion evaporates.

wolfram alpha says it takes 83 KJ for 100ml (a quarter of a pint) of pure ethanol to be vaporized. The stove will put out at least 1 KW. With [W]*[s]=[J] it would take about 83 seconds to evaporate 100 ml of pure ethanol. even with the sugar and water he adds i doubt there will be much vodka left after 3-5 min of boiling.

There is an FDA study of how much of the alcoholic content remains after a certain cooking time. You should check it out. Its definitely not that cut and dry.

yep, he's effectively just shown us how to dissolve way too much sugar into a small amount of water. ethanol boils at 173F or ~78C, the ethanol component of vodka will boil out prior to the water component boiling, so the longer you boil/more heat you add, the less ethanol is left over.

When you mix substances the boiling point is increased , making it harder to turn into gas or vapor. in theory none of the vodka should have evaporated xD

While it does take a long time for all of the alcohol to boil off in dishes like soups and sauces, the alcohol would burn off much more quickly when making candy because the temperature is much higher.

No, a very small quantity of it does, think about it, when you boil water it doesn't all evaporate instantly, it's the same with booze.

The boiling point of alcohol is around 174F (depending on altitude) the spirits will steam off, while there may be some residual vodka, there will be less than what you put in (source - I distill moonshine)

Yes, but you have to cut it 50% with fruit juice, assuming you are using standard 40% vodka it will freeze around 25F (This only works for about 20% alcohol over all). So this will actually be beneficial as straight up vodka popsicle might not taste as awesome as cherry/orange/Chocolate-milk popsicle that will get you drunk off a couple of them.

Yes it does, it simply has a different temperature at which it changes it's state of matter due to the alcoholic content, which of course makes it harder to freeze.

Using an ice tray with some not too large and not too small stick ensures better lollipops, although I'm not quite sure if they'll melt in your mouth. If they do, then by all means do that! I love your videos so much, and I thank Reddit for sharing this.

Everclear would be the best bet if you wanted to get a buzz. You'd more than likely feel something after three, maybe four lollipops if you had a low tolerance.

Vodka doesnt freeze in a regular freezer, it would talk temperatures beyond the common freezer to freeze vodka

some alcohol remains with cooking: a study found 25% after 1 hour of baking or simmering, and 10% after 2 hours...

As a culinary grad you'd think I'd be able to figure out a way to make freaking hard candy with booze in it that can actually get you tipsy. Yeah the alcohol would evaporate from the heat but the flavor remains. I'm going as a psycho chef for Halloween this year to a Carnival: Murder on the Midway party & wanna take some candy to hand out. grr, I thought this was what I was aiming for. poo :(

Don't want to be "that guy" but vodka will freeze, just not in your freezer. It would have to undergo a lot of pressure change and lab-grade temp control.

Actually, it does. Just at a lower temperature than possible in a freezer that you'd have in your house.

Is the alcohol content low because of the size and shape of the lollipops? I was thinking of doing this in an ice tray to try and make mini popsicles or suckable hard candies or something...

not completely true. vodka does freeze, just at a much lower temperature depending on the alcohol content. the higher the alcohol content, the lower the freezing point. cheap vodka usually has more water in it so it will freeze a a higher temp. but most likely a normal freezer will not freeze vodka

actually, alcohol boils out at ~120 degrees, but you can do the same thing using Gelatin.

Fantastic idea! My wife said the same thing (because lets be honest, the color is unappealing. i just wanted to show a basic recipe. I think a good idea would be cola flavoring :)

What do you mean by low quality? Is Amundsen, Finlandia, Smirnoff or Skyy vodka low quality? I always tought it's because it gets oxidazed or something when you open it, even when I was a kid my parents if they opened bottle, they always put it in the fridge not freezer again, because it would freeze

Sugar and glucose are extracted from plants and vodka is also extracted by fermenting cereals. But why do vegans perform oral? Doesn't that count to their diets?:))

That's exactly it. You can taste a hint of it in there. But they're small so there isn't much in there. If you don't have moulds, why not use shot glasses and pop the sticks up in them, then when they harden, take them out :)

At 78C ethanol boils and vaporizes, I doubt there is any ethanol left after this process.

could you use partial corn syrup or other syrup to reduce the sugar to a syrup then add the vodka solution near the end? So as not to cook away majority of the alcohol?

The amount of actual alcohol in the finished product depends on how long you boil it. And remember that vodka has a lot more alcohol in it than wine. So I'm guessing these might work but you need to eat a huge amount of these before you actually get drunk :D

They are dude, the vodka (vodker) wouldn't burn down it'd take several hours to burn it all off. Thanks for commenting though I do appreciate it very much. That said: each lolly does have only a small amount of alcohol in it, but if you want to just get drunk, you'd be better off chugging the bottle of vodka (vodker).

Thats why you should not boil it, just put it hon high heat :) (the bubbles comes from other, more low temperature boiled stuff in the mix)
