How to Make Water Kefir (Easy Step by Step)

Kefir Connection

How to create your own healthy, fermented water kefir soda beverage, step by step.
The First Ferment: Whether you have live kefir grains (meaning they are wet and plump) or dehydrated grains, the first step is the same:
1. Make Sugar Water: Dissolve organic or brown sugar in room temperature water. Add it to the water and shake or stir until completely dissolved. The ratio is about 1 Cup of sugar for 1 Gallon of water, or ½ Cup for ½ Gallon of water. The ratio depends more on the volume of water you are choosing to use (how much kefir water you want from each batch), than the amount of volume of kefir grains. Most people do about a gallon of water at a time, others do smaller batches (half-gallon). The kefir grains do not like chlorinated water (tap water). You can use spring water, or, you can leave a container of tap water out for 24 hours with a cloth over the top (and the chlorine will evaporate out). Finally, glass jars are best for kefir grains. Plastic is fine (example, gallon milk jugs) for a while, but over time, you’ll likely want to get glass containers.
2. Add in Your Grains and Let It Sit: Add your live, or dehydrated grains to the sugar water, and place a paper towel or dishcloth over the top (this allows the carbon dioxide to escape during the first ferment, as the kefir grains consume the sugar in the water. It also prevents dust and particles from getting into your kefir water. Place the container in a somewhat dark spot for 24-48 hours (the warmer the temperature in your home, the faster the ferment - in the Winter, the first ferment can take 3-4 days, and in the Summer, it can be as little as 24 hours). You may see some kefir grains floating at the top, while most stay at the bottom. You will also notice air bubbles rising to the top (especially when the container is moved or stirred). If the kefir begins to produce a sour smell, it is likely out of food (sugar) and the water needs changing. If you are using dehydrated grains, you will want to discard this first batch of kefir water. Your grains are activating, and the first batch is just them waking up.
3. Strain Your Grains: When it has been about 48 hours (2-3 days) - you will strain out your grains by pouring your kefir water through a strainer (not a colander, but a mesh strainer) into a bowl or container larger enough to hold your water. If your grains are dehydrated, then you’ll just discard this first batch of kefir water.
4. Repeat: Repeat step one (dissolve new sugar in new water), add your strained grains back in, cover with a cloth and set it aside for another 24-48 hours.
The Second Ferment: You now have “activated kefir water” to which you may add a flavor and bottle (to create a flavored, kefir soda).
1. Add a Flavor: You now have a bowl or container with activated kefir water - this is the water left behind after straining out your kefir grains. This water still has tiny bits of kefir inside, which will continue to feed (producing carbon-dioxide as a by-product) if given more sugar. Add to this container of kefir water, a flavoring of your choice. What you choose for the flavoring and the amount to add is up to personal preference. Many people choose to use a frozen juice concentrate (example: grape, apple, cranberry, white-grape, fruit punch, etc.). The less concentrate you add, the lower-calorie your kefir soda is. Some choose to use fresh fruit as their sugar source, and still others choose to drink the kefir water as is after the first ferment.
2. Bottle Your Soda: Once you have added your flavoring and stirred it to distribute - it is time to bottle your kefir water in a closed, pressure-safe container so it can begin to carbonate. Most kefirers use flip-top pressure-tested bottles. You can buy these at a grocery store or online (just search flip-top bottles on Amazon). Use a funnel to transfer your flavored kefir water to the bottles. One gallon will fill about 5 bottles. Leave a little bit of air in the neck of the bottle for the carbonation. Place these bottles on a counter or shelf. The longer the bottles sit, the more carbonated they become. They also have fewer calories the longer they sit because more of the sugar is consumed. You can drink these right away or let them ferment for longer. If they are in the sun, or a warm location, be careful as they will ferment fast and build up significant pressure.
3. Burp Your Bottles: Each day, grab a cloth and place it over the flip-top, then slowly release any pressure. This keeps your bottles from building up excessive pressure and spraying kefir soda when you open them. Placing them in the refrigerator will also decrease the pressure naturally. As you drink a bottle from the refrigerator, place a new one in the fridge to cool.
4. Shake It Up and Drink It Up: The kefir will often settle so it’s best to shake it before drinking. If your bottle has been fermenting for more than a week, smell-check it before drinking.

Burping the bottle is EXTREMELY important. However hilarious (I now know my husband's fight or flight is definitely flight because he flew for the hills), I now have a purple grape stain on my kitchen ceiling and had a huge mess all over my kitchen to clean up after my 16 Oz bottle exploded worse then a bottle of Bubbly Shaken on New Years Eve, when I popped the top. It had only been fermenting for 3 days. Tasted amazing though!!!

About 12 grams of dried grains will do great in 1 quart of sugar water. The amount of sugar by weight is about 5 times the amount of dry grains in weight. For 12 grams of grains, use 60 grams of sugar: 30 grams pure white cane and 30 grams unrefined brown sugar. Steps: 1) hydrate 12g dried kefir (keh-feer) grains with about 8 liquid ounces of non-chlorinated, room temperature spring water in a quart jar. Filtered water doesn’t have enough minerals. Hot water will kill the microbes. Stir occasionally until well hydrated (15 minutes). 2) add the 60 grams of sugar. 3) fill jar with the correct water 2” from the top brim. 4) close lid snug and gently shake/stir to fully dissolve sugar. 5) remove lid and replace with clean lint free cloth and rubber band or even better a lid with an air lock specifically made for your jar. 6) ferment at room temperature in darkened place for about 2 days: 74° 12-36 hours. 7) strain and enjoy or ferment liquid again (without grains) and optional flavorings. 2nd fermentation in closed bottles allows for carbonation. Use caution. Burp or test often to avoid explosion.

Maybe the chlorine evaporated but think 🤔 very hard about the Floride and other toxins that will remain in the water. I Know to my surprise my tap water has lead in it. Never trust public drinking water. Fluoride was added to our water to calcify the pineal glands which is where spirituality free thinking and oneness with the universe comes from him giving that advice is very bad and risky numerous places in the United States and in Europe have issued caution statements regarding public water if we're at their Mercy to give us that letter what happens if it never comes? Me personally I experienced last year what they called a beautification of the roads which really they were removing very large water pipes little did I know that my water had been turned off during the day when I was at work I found out later from the neighbor I had been coming home and going about my life like normal because my water had been on when I got home I never received a letter in the mail telling me to boil my water and return my family got very sick from it proving my point that you should never drink tap water unless you distill or minimum boil it first. You can't trust everything that you see on RU-vid videos unfortunately

What type of bottles do I use? I know it’s the swing type. I purchased some at Marshall’s. Is there a specific brand or thickness of glass? My first bottle did just fine in the second ferment. The second bottle I made, I burped often and in the evening it exploded with such a force that if I or my kids would have been in the kitchen for sure one would have lost an eye! It shook me. I’m just trying to find out, where to buy bottles that are strong enough for carbonation and I of course burping them. The first bottle was excellent, I’m just shook from the second bottle. I’m afraid to put in fridge and it explode at our eye level. It might even slit our throat. It went off like a bomb. It’s freakin scary! I saw chard of glass fly like daggers! I don’t want to give up on making second ferments.

Nowhere in the instructions do they call for using a full gallon of water like you have in this video. Do you actually need to use more sugar when making a full gallon to give the grains more food to propagate? Seems like if the mixture is not sugary enough it would impact propagation. Thank you.

Okay watched a different video and learned that once you've done the initial kefir grain rehydration, you can then use 1 cup of sugar for each 1 cup of water, so it sounds easy enough to scale up to have a nearly full gallon of kefir water to which you then add your sweetener / adjunct prior to bottling or canning. Thank you.
