Love this! Quick question, what is the difference between making ghee and making browned butter? I make my own ghee and toast it until it is lightly browned, but is that the same as making browned butter? If I use my homemade ghee can I toast it further?
Brown butter is regular butter but toasted, so it still has the milk solids in it. Ghee is clarified fat from the butter, so it doesn’t contain the milk solids. Toasting ghee might give it a deeper flavor, but it’s not the exact same ad browned butter. And I think whipped brown butter needs milk solids on it to become fluffy.
