The single set doesn’t really have much parts to play around with, but with 16 there’s plenty of potential. My first thought are some speeders with sidecars like in the clone wars. I think that’d look pretty sharp with the white color scheme. It might be possible to build an open cockpit snow speeder with some creative plate work, or the much smaller cannon speeder from the old Hoth rebel battle pack. Finally, if you’ve got the UCS At At you could really go crazy with an awesome Hoth diorama. The larger slope pieces are perfect for creating some footprints for the At At and building up some terrain for a large battle. Or just a really cool display base for the At At.
