I was wondering… when your method of binding off is done, and you have cut the yarn, why not just pull the yarn end “out”, ie instead of putting the yarn end through the final stitch that remained on the needle?

That's the way I do it.

I wondered that as well. I will test out both and see which I like better.

That's a good question. I tested both approaches and I find that the knot formed when we pull the tail through the last loop gives the edge a better look. Of course, it is just a matter of personal preference, so try both ways and see which one you like more.
