I call this the Trim Pause trick, or Trim-Pausing.
It's June 2023 and I still can't find anyone else who knows this trick. I discovered it last June on my first souls game (bloodborne) in under an hour out of desperation. I've seen a handful of posts that mention using Rest Mode to pause, but as you see here, you can suspend the application without using Rest Mode and thus keeping the PS4 on.
I assume this works on the PS5, but I can't test it myself. If someone can confirm let me know so I can add that info here.
STEPS:
Find any video in your capture gallery.
Press Options and hover over the 'Trim' option.
You can double tap the PS button to quickly go into the game, and to go from the game to the Trim option. In order for the trick to work, you cannot go to a different place in the XMB, so you'll have to leave it over the Trim option before entering the game.
So long as you have prepared the above, you should be able to pause whenever you want. Simply double tap the PS button to quickly reach the Trim option, then select Trim, which automatically suspends the application (like in Rest Mode).

The only way to unpause the game application is by opening it again, so you can take your time in the XMB to do anything else you want. But if you want to retain the pause option, you should go to the Trim option again and reenter the game from there (double tap the PS button, like I said).
In some versions, you may have to press X a second time after 'Trim' to confirm you want to suspend the application, but it still works, even if it takes a second longer.
I can confirm this works on every FromSoft game I've played. Those would be:
-Bloodborne
-Dark Souls 1-3
(I assume it works on all FromSoft games, in the same way that Rest Mode should suspend all of them)
