This is the best Escovitch fish recipe on RU-vid handsdown. I have made it several times and I never get enough of it. I'm Jamaican but grew up in the States. This is the one dish I never learned how to make. Now my family is like who taught you. I'm like "Auntie" Debbie! 😂😂😂

Yes miss Debbie you can cook, from once you put in the sugar, some people use only vinegar in the sauce, making the fish taste sour, I was looking to see if you would Add sugar and you did, thumbs up Miss Debbie, your cooking remind me of my mother's cooking.

I'm African and this is my favourite Jamaican dish of all time. I'm a long time patron to my local Jamaican restaurant in London. The moment I step in they all know what I want. I don't even have to speak. I've also had it with sprats. So delicious. My question is how do you stop it from attracting bacteria in such a hot Jamaican hit if you gonna wrap it like that for 12 hours? Should you keep it in the fridge if you live in a hot climate?
