Isn't it in our best interests to add minimal amount of water? If so, how much? Otherwise, when chucking out the water in which mushrooms have been rehydrating, we are basically chucking out the flavour we could be eating as part of the dish we're trying to make with these rehydrated mushrooms.

It depends on what you're using them in. You can experiment and find what works best for you.

The only ones that I ever rehydrated bore a strong resemblance to rubber bands, I threw out a bunch of them.

I wouldn't eat them alone for sure! They are okay rehydrated in soups and sauces.
