How to prepare goat light soup | aponkye nkrakra like it is from your favorite joint.

So I went to the butcher to get a goat and when I got home with my meat, I just had to make some aponkye nkrakra with some of it before it hits the freezer. Finger-licking good! This recipe is simple and quick but the end result is simply amazing! Do try it❤
Ingredients
3.5 lb goat meat
6 large tomatoes
7 large shallots
1 medium sized red onion
2 habaneros
3 cloves garlic
75 grams fresh ginger root
1 teaspoon aniseed
2 star anise
7 cups water
salt to taste

I’ve never seen or eaten goat meat. What parts of the goat did the meat come from? The meat looks strange or like organs. What are the spongy piece and the coiled up pieces? I love your recipes but this one looks funny. Lol. Hopefully you can get home often. I plan to visit Ghana this year.

I had the exact same issue. Find an African store or call your butcher and request it. I had to buy a whole goat. But dollar for dollar well worth it!
