WHY you ask? Well, don't you want a highly productive fruit tree? 'Cos that's what pruning does!!! It stimulated new growth, controls disease, and opens up the plant to more sunshine, which is so vital to flower and fruit production.
Where I live in the Bay Area, Jan and Feb are the months to prune most fruit trees.
In addition to producing vigorous new growth, winter pruning is so much easier since you can see the shape and structure of the tree.
Each tree is a bit different so definitely research how the particular type needs to be pruned. I made the newbie mistake of just hacking my grapevines down the first time I did it, and I did not get fruit that year! So, ya, read up and watch some videos by experts. And then, go prune those fruit trees!

Can you please share your thoughts on reducing the height. Mine are much too tall and I want to bring them down by 50%

I will share my thoughts with the caveat that I do not personally have experience pruning a very tall and mature tree. So just general guidance: Try to keep the number of base trunks to about 3-5 tops Do the process gradually over a few years. No more than one-third of the height, on no more than one-third of the vertical growing branches/trunks Caveat: Pomegranates fruit in on 2+ year wood so if you are too aggressive about pruning, it could affect production for the following year. Good luck!

? There's a 2 week difference in the video recording time according to the video and the post date timeframe. Is it too late to prune a tree like that in the north part of your area?.

Not at all! You can prune probably through mid March, quite safely, in the Bay Area.
