Redundancy is definitely important, if something happens to one recording then you could switch to that source during post production. Also if you can someone should be monitoring the audio as it being recorded like with headphones. Perhaps there is interference like a hum or someone is not talking into the pickup pattern. If your not listening you will not know about till much later. If you find it by listening you can immediately fix the problem, and continue.
