@@epistte I found something like this in my grandparent's stuff. Not sure what their originally for, but they're handy for that, or for putting smaller leftovers in the fridge.

This is EXACTLY what I’ve been doing for years ever since your similar pizza reheating video. I clicked this hoping that would be true, and lo and behold it was! I feel so proud of myself. My ingenuity has been Chef John approved™️! I added this as a comment but I feel for PSA purposes it needs to be made top-level: The dry frying pan, using existing oil in the food, also works great to bring back breaded&battered food! Chicken nuggets, fish from a chip shop, breaded fillets, that kind of thing :) It works far better than an oven because it doesn’t dry out the interior!

Me too with fries and pizza. I hate to say it but the dry pan re fry is probably the best way to go with fries but you will never get them back to full flavor and texture. Fries are impossible. Pizza works better. Flip it!

Reheating pizza on frying pan by itself works well with thin pizza, but not too well with thick sliced stuff pizza of the thickness. Unless, one use a cover method and slowly let it steamed and later pan fried it. This method works well for me for decade on stuffed pizza.

@@wilsonlam4272 Yep, I reheat Detroit style pizza in a skillet all the time. You just need to cover the skillet and set the heat to low - 3 on my electric stovetop. It’s ready when you can smell it.

I reheat most of my leftovers like: sandwiches, fries, fried chicken, burgers, kebabs …etc in my Electric Grill/Sandwich Maker!! It’s way way better than a frying pan as it heats from both sides at the same time, so no need for the constant flipping and they come out as if they were freshly made I swear to God!!! Just make sure to get a good quality Electric Grill/Sandwich Maker with a none-stick detachable plates for easy clean up! Or I sometimes wrap whatever I want in aluminum foil before heating them, so no cleanup is required and no mess whatsoever!! 💕

@@elleohai Hahaha I used to do it like Chef John walah but it needed constant flipping, patience and you had to stay at the stove all the time or the food will burn, then I thought about using the Electric Grill/Sandwich Maker and it's way easier and it can rarely burn anything unless you totally forgot you are reheating the food. I just add whatever I wanna reheat and go fix a beverage or a salad while the Maker is doing it's thing and voilà, the whole meal is ready at the same time. ❤️

This is a great tip I've been using for some time. Works for any fried foods I've tried including battered fish. You can reheat pizza toppings with the topping side down for a minute or so, then flip the crust side down until the crust is crispy for those who prefer that way. Sometimes I may jump start the reheating for 20-30 secs in a microwave, then into the fry pan.

This is literally the method I have used since I accidentally stumbled upon it a few years ago when a child wanted reheated fries and the microwave was broken. The fries came out so much better.

Great tip! I've been doing that for years. Left ovr pizza is completely restored to like new in a covered no stick pan with a light splash of water over med/low heat for 5 minutes. Works like a charm.

I also use an air fryer for about 2 minutes. I think the best use for air fryers is to reheat previously fried foods, and french fries are no exception!

Chef John, I've been doing that for years. I have a couple of tricks for you. 1- to heat them up even faster, pop them in for microwave for 30 seconds before sautéing in the pan. They will be warm and moist so they won't burn. 2- add some butter, rosemary and maybe garlic powder to the pan before adding the fries for a more flavourful fries Enjoy 😉

Thanks for this, I have a local place that has an item called "stink rose fries" and they are shoestring fries, garlic confit, roasted garlic, crispy onion, rosemary and my favorite smoked blue cheese crumbles. I love them. Also if people have a problem doing a pan flip, just practice with a piece of bread it in to get it down.

This is how I reheat pizza, I just put a few drops off water on the side of the pan to steam it and put a cover on it. Makes the topping nice and soft, the cheese gets melted properly again and the crust gets nice and crispy.

I’m 16, newly responsible for cooking in my family, and I made far too many fries yesterday. My family is currently (understandably) sulking at having to eat soggy fries for lunch today. I just tried this with a small handful of the soggy fries, and they taste HEAVENLY again. Kinda like a combination of fries and chips. Thank you - you’ve saved me and my family from a disgusting meal!

I’ve found that freezing leftovers instead of refrigeration also works very well to avoid hollow fries if you end up with that issue

I love this technique for pizza... for fries or any other fired food that is not "hot and crispy" at the time I want to consume it I just use my convection toaster oven on toast for 3-5 min... not the Chefs recommendation but quick easy and for me good results.. Happy reheating!!

This video was suggested to me by RU-vid. I have tried this skillet pan method for decades. It works well with thicker french fries like steak or crinkle-cut fries, but fries like McDonalds do not work too well. The thinner fries will simply shrink and dry out, creating a different texture crunchy fries.

Yup, the pizza reheat method changed my life. Even a small pizzas feeds like two people, and having one solo puts you in the seat of over eating and going into food coma for a couple of hours, or throwing food away (which I hate to do). Now when I have pizza by my lonesome, I pop half of the pizza in the fridge and I got myself a snack for the next day.

I like using the air fryer, as usually there's a really good layer of oil that comes out when reheating them and collects in the bottom away from the fries. A few less calories over all. lol

I've mastered frozen fries. Put oven on at 450, put fries on pan large enough for them to have a bit of space between them, drizzle cooking oil onto them, sprinkle on kosher salt, then use tongs to mix the fries and the salty oil so that they are all covered. Stick 'em in the oven. 15-20 mins they should be cooked, use a spatula to unstick them from the pan. Then I usually cook them for another 15-20 mins until they are crunchy golden. So good.

An air fryer is like a mini convection oven. So, the results are like if you used a regular convection oven. The fries come out crispy if you don't over fill the air fryer, but it's very hard to season them unless you do it before you air fry because there is no moisture for the seasoning to adhere to after air frying (if you don't add oil.) Personally, I don't like reheated air-fried fries because they've dried out quite a lot during the initial cooking process and lack the moisture for them to taste good reheated.

Yes, this works. I had some cold Mcdonald's fries in the fridge. I reheat as the chef said and they are delicious. Better than directly from Mcdonald's.

Recently I had success with re-heating leftover pizza. I used my pizza stone in a pre-heated 425 degree oven for 20 minutes and the pizza was hot and delicious and the crust was crisper than it was when I ordered it from the pizza place. So take this tip. It works.

About 50 years ago, I was struck in the head by a blackboard eraser hurled at me by my Latin teacher who had taken exception to my asking about a "third alternative". So, when you mentioned "an alternative fourth method," I ducked on your behalf. You are the mutton korma of my childhood trauma.

My go-to method has been to use our toaster oven set as hot as it can get for about 5 minutes, which is a good method, but easy to overcook with. Also, that doesn't work for most people, since for some mysterious reason, toaster ovens are an uncommon kitchen appliance. I've somehow never thought of sauteing them. This is a game changer. Thank you, Chef John.

This is how i've been reheating my fries for the last 20+ years... though I usually add a teaspoon or so of oil or margarine to the frying pan.

I do this with a spatula and an iron skillet. The amount of oil I use depends on the fries, but generally just enough to keep the pan slick. Works like a charm.

I find that any air fryer does a perfect job of reconstituting leftover fries🍟and probably the fastest method. Turbo reheating is awesome!

If you have one, an an air fryer it works even better and faster than a pan, toaster oven, and regular oven. I’ve never tried it, but an oven convection setting probably works too since it’s basically the same thing as an air fryer.

Ok. I've never seen any of your videos before. That being said, I made homemade French fries and had too many leftovers because I cook for an army and when it's just a family of 4. #1 definitely doing this. #2 I loved every one of your hilarious comments and am now subscribed.

i've been doing this method for years. when they are almost done i add some parm in between the fries n let the parm crisp up then plate up with 2 over easy eggs on top n fresh parsley (whatever fresh green i have at the time so cilantro, curly, flat, green onion, chive any of them work)

Hi there! I love this idea! I can't tell you, there's been so many times I've had to throw out leftover fries cause no one liked the taste of cold fries or just too lazy to reheat them. I will definitely have to try this one out.

This is THE best way to revive fries that you would have just thrown out. I've been doing this for years. Also, you can add a bit of fat of your choice (bacon, duck, truffle oil) and any additional seasonings to make them better than fresh (garlic powder, parmesan, parsley).

Use the air-fryer. 375 deg for 3 minutes. Frozen fries 375 for 11 mins (NO defrost). Used to do the skillet way. That works too.

Chef John you are the greatest. When we get food delivered the french fries are always cold, and nothing is worse than cold french fries. It's gotten to where if I have food delivered I don't order fries.

Just spread them on a baking sheet. Place in a preheated oven on high. Leave till you see the oil bubbling on them. Turn oven off and leave them in for 5 - 10 min. Just like new. And also preheats amazingly using a sandwich grill

This also works for home fries. I've done this many times and now I'm finally validated that it's legit. And I thought that I was just being lazy. Put fries in a pan, turn on the heat. Shake pan a few times and eat. Hey, I just rhymed.
