If you want to customize the names of the default folders such as Documents, Desktop, Downloads and pictures etc., you can't simply rename them or create a shortcut with a different name and then pin it etc. because that won't work.
What you can do is create a junction link to these folders and then name them whatever you like. Then you can pin this new folder\shortcut and then unpin the original default folder. This should work for both Windows 10 and Windows 11.

mklink /J (Link) (Target)
mklink /J “D:\Todd's Documents” “C:\Users\username\Documents”
