Direct onto the coals is actually 'Caveman' style sear. Your doing yourself a disservice just calling it a reverse sear. Get that title edited. 👌 Interesting to see your videos. I'm new to Kamado grilling, and have been watching countless videos, picking up tips and ideas. I took delivery of my Big Joe 3 last week. Manged to use it four times over the weekend, including cooking a full English Breakfast on Sunday. 😄

@@BBQLIFE Thanks. I'm sure I'll enjoy it even more once I've got my head around its capabilities. Have literally just broken it in. 👍 Just waiting for the Joetisserie and Soapstone to be delivered. Have you got any recommendations for charcoal.? I used to use Coconut shell briquettes on my old BBQ, along with any cheapish lumpwood. I'm currently using KJ Big Block charcoal that came with the bundle I bought. Have got some Draak charcoal on the way. Found a deal that looked reasonable, and thought it was worth a shout. Looking at BigK Dura for my next purchase. Would be interesting to hear your thoughts. 👍

If in honest I never remember them we don't use F in the ok only C so I don't know them that well. Google converts temps quickly if you ask it

Love the content!! Just wondering if you can get cast iron accessories for the Aldi komado as you can for the komado Joe?

The kamado Kings D+C fit the 2021 AK. I'm told the 2022 model is the same size there for you can get cast iron plancha to fit the D+C. Another option Is a steel plancha from Steel smoking build yo fit thr AK mention bbq life for 10% off

This looks awesome, will try it. Not really related to this video in particular but any suggestions for keeping a drip tray off the aldi kamado heat deflector? I find being on it directly evaporates the water quite quickly and end up with smouldering fat in the drip tray. Would be good to have the drip tray not directly touching it I think.

Evening Tom, just checking on the video as I'm planning my reverse sear on a couple of sirloin steaks in hours time (when the cattle dust has had time to work). I'll not do the dirty bit yet, I'll keep it simple and once I've got the hang of it I may well go to the next level next time. By the way the simple close up of the vent settings was excellent, I know it comes with experience but it does help clarify the situation. I wonder if Aldi make their Tomahawk steaks to just fit in their Kamado?😄😄

Well I made a complete mess of that! The steaks were about 3/4" thick and the temperature at grill level soon shot up to 136C in no time at all even with the vents all but closed, the steak temperature all too quickly got to over 70C. Ah well lesson learned start earlier and take your time instead of rushing and probably get thicker steaks.

@@johnwatson8192 In a Kamado put your coals on one side (glowing orange, no flames) then above the coals put a "divide and conquer" system with a heat deflector on the opposite side. Above this put your steak (It will then cook mostly on convection heat instead of direct heat), ideally a bit of hickory etc on the edge of the fire will lightly smoke the meat adding to the taste. For a medium rare I would take it off around 130C, perhaps even a tad lower, pat it dry then reverse sear it for a finishing temperature of 145C. BBQ heat is too intense to do steak justice, so longer and lower via this method highly reduces the chance of over-cooking. Let it rest 10 (but not airtight wrapped as this will make it soggy as it absorbs moisture)..

I'm new to the AK. I've bought an Aldi big Daddy rump steak (450g), was wondering if this method would be suitable for it (apart from not having a useful bone to help turn it).

Yes but only if its a thick steak, a dirty sear doesn't work well with a thin steak.
