How To Roast Coffee Beans In A Frying Pan or a Cast Iron Skillet At Home: roasting made easy

You can manually roast batches of small quantities of green raw coffee beans at home to provide a steady supply of freshly roasted coffee. Roasting as it is called, is a dry kind of frying or toasting. Absolutely nothing is added. Done without the help of any machine. Done manually by hand using your skillet, or pan, on your stove or hob. It is essentially heating in a bare pan till the coffee pops like corn pops to become popcorn. The first pop is called the "1st Crack" in coffee circles, and should ideally be reached. After the coffee beans continue getting heated and after it crosses the stage of this 1st crack, it goes silent for a moment and then transitions into a continuous milder popping sound which is known as the "2nd Crack". Only rarely do you need to roast this long to reach the second crack. Usually just crossing the first crack will do. Thanks for watching. The seeds of the coffee fruit after harvesting and separating from the fruity pulp is called the raw coffee beans. This then needs to be roasted and subsequently ground or even powdered, to make coffee.
For small batch home roasting, the type of pan does not matter. In this video, a French copper pan is used. Cast iron skillets are excellent for heat transfer, however, the oils from the beans can make the skillet eventually smell of coffee. Stainless steel does not have this issue. Copper bottomed or clad stainless steel pans are ideal as it gives ease of maintenance with excellent heat transfer.

One thing I learned from roasting fresh beans is resting them for a couple days for the best flavor.. and a tip.. if it start to look like dark roast after doing this you already burned them cause it keeps cooking and degassing after your done with it.. if it looks like medium roast after cooking them you just made dark roast.. try it.. you'll know what I mean after resting, cooling, taking off shafts and degassing.. 😋

Resting reduces the sourness. More CO2 gives more sourness. Longer it rests the less froth (sprightly crema) and less sourness. Sometimes the fresh sourness can be of benefit! So it depends on how you want to play it!

I find that leaving the roasted beans for a few day brings out the flavour really well. If I use them right away I have a slight acidic taste.

I have roasted in stainless steel pot for more than a decade, and your description saying that stainless steel "does not have this issue" contradicts what I find. The stainless steel pot can be used for many roast sessions, but a slow build-up of some film occurs. Suddenly after several roasts, the next roasting makes the coffee very badly bitter. Cleaning the pot with a stainless-steel cleaner will then eliminate this bittering problem. Note that I use a lid with the roast pot, so this is a possible reason why volatile material builds up faster; the lid keeps it trapped.

Agree, the lid will also alter the taste. Sometimes lids make it better and most of the times the lids make it toast unevenly. So the top regions cook differently to the region in contact with the bottom of pan. So you can still burn the surface layer, but the inside will cook more evenly. The main problem with lid is that you cannot keep stirring. Alternatively, try your oven as I have shown in my more recent videos. :) ... but the pleasure of pan roasting is best.

@@somersetdeepak As regard to evenness and avoiding burning part of the beans, this is typically not a problem for me, because my movement INCLUDING keeping the lid on the pot DOES allow me to toss and mix the beans. But then again, my sauce pan with lid is about one and a quarter quart size, so easy enough to agitate without opening the stick in a spoon. I made a video to show this.

This is great!! Point of linguistic note-to “fry” something in English means to cook it in oil. Frying coffee beans means heating oil and then putting the coffee beans in the oil to cook them. Might be delicious! But you are roasting the beans not frying them. 😊👍🏻

Inspiring to watch. I had it in mind to go find some green beans in the market and try my hand at roasting. Many years ago I had the pleasure of drinking freshly roasted and freshly ground coffee at a place where they roasted it in gigantic copper cookers. The aroma is remarkable but the taste is entirely unique. Nothing is like freshly roasted; nothing. Heavenly. Thanks for uploading. Wish me luck. I'll be using a big cast iron frying pan.

After a year I happily roasted some 'fresh" beans in a cast iron pan. Everything looks easy except the blowing stage. I did that in the balcony, but I noticed that if I blew with more force (my own lungs) I could send the coffee beens over the board too. When you blow the scales do you use the original pan or you move the beans in a different (deeper) bowl. I also need to blow in stages as I become dizzy, LOL.

I noticed that you made your coffee immediately after roasting it. I was told that you were not supposed to do that, but in fact, you are supposed to let the coffee sit for 24-48 hours to release gasses. I have never roasted coffee, but I am defiantly going to try soon!

Jim Davis cool! yeah, I have been roasting sense my last comment and have perfected my taste profile. However, the taste and aroma is just that much better when I have waited for a couple of days before trying. Not sure if you have noticed, but there is a sour undertone in the coffee if you brew right after roasting. That taste is the gasses within the bean that have not yet been released. I despise that taste. I would rather wait.

I've been roasting my beans like this for years. You mention that a frying pan results in an uneven roast, but that can be mitigated by using a lid and shaking the beans (but I recommend taking the lid off every now and then and stirring to check how things are going and let out any steam). (Other than that my only criticism is that you taste tested your coffee by making a cappuccino -- yuck! ) ;

​@@somersetdeepak My comment simply pointed out that a lid facilitates getting an even roast in a frying pan because it will stop beans from jumping the pan. That's all. And the steam is precisely the reason I mentioned that the lid has to be lifted regularly. You don't want to steam the beans. I use a much over-sized pot that I can shake, tilt, and stir as I go without worrying about agitating the beans right out of the pot. Sorry for the confusion.

You can make coffee with a 1) mocha pot 2) cafetière press, 3) Filter coffee pot 4) espresso machine 5) cold brew soaking overnight in fridge. You can explore all methods to find your favourite choice. :)

Dear Dee Francis Padamadan, Greeting ! I want to open a coffee shop here in Bangaldesh. But here coffee is really expensive. Is it possible to get the same coffee available here ( Only Nescafé by Nesle , Switzerland ) if I import Raw coffee beans / Roasted Coffee beans and then roast / grind the beans by a roasted & grinding machine ? Thank you so much for the video.I've just ordered my first fresh beans, and you gave me hope I won't ruin them. I don t have gas, but I have an induction unit and cast iron pans. Hope that is good enough. The induction is easy to control, similar to fire, only it works differently. My question, could you use the beans in an espresso machine? Does it have a decent crema? I think you showed that in the end. How soon after roasting and cooling could you grind the beans? Thank you a lot!

Colour, slight oiliness developing on surface of beans, crackling sounds from the beans as they "pop". First there is some slight sizzling then loud popping sounds. This is called the "First Crack". Here the internal temperature is about 200˚C. If you keep roasting instead of stopping then you enter the next silent stage followed by another kind of crackling sound... a more continuous, less loud cracking sounds... this is called the "Second Crack". By this stage the beans are starting to get overdone. Some varieties require you to roast this far... so it all depends. :)
