I always think of roasted vegetables as a fall dish but you made me realize that there are so many other vegetables to be used at other times too. I love both zucchini & sweet potatoes. Looking forward to trying this recipe and including the balsamic vinaigrette.

Thank you so much for sharing this method for cooking roasted vegetables. I got a bottle of Kraft Balsamic Vinaigrette and made roasted veggies for dinner tonight. I couldn't wait to try it. They were so delicious, I used veggies that I had on hand: mushrooms, red onion, red bell peppers, zucchini, cauliflower and garlic. I cooked them in an 8qt. 1200w air fryer at 380 for 12 minutes, stirring them around half way through the cooking cycle. They came out great, so tasty. Thank you again.,

Yum! Yum! & Yum! There is nothing better than delicious roasted veggies and dear Rachel, these roasted veggies I'm sure are out of this world scrumptious. This dish is something that Johnny would love as a lunch. We have garden vegetables coming out and I think some cherry tomatoes in some of it would be good. If I did that, I think I will skip the sweet potatoes and use everything else that you did. Just looked and sounded yummy. We love balsamic vinegar.
I add cherry tomatoes to my mix, but not the sweet potatoes. The last five minutes or so I sometimes place fish fillets on the top. Edited to say, any leftover veggies I chop small and add to couscous to serve cold with salad the next day.
I never realized to cook the sweet potato first!! And have never tried balsamic vinaigrette!! Will definitely be doing this! I tend to roast sweet potatoes, carrots, Brussels, broccoli and red onions, yes, a boring color combo!! I use Weber garlic hen blend as well.
Thank you Rachel! I’ve made roasted vegetables but have not done it with balsamic vinaigrette… I will try this! I have added cut up chicken and roasted the chicken in the oven and then added to the roasted vegetables which makes it a complete easy meal ☺️

@@rachelcookswithlove I am definitely going to do this recipe, except I have a question. Wouldn’t it be better to toss with the balsamic vinegar first rather than the oil? It would seem to me that oil would be a barrier to the vinegar. I plan to use butternut squash and carrots instead of the sweet potato. OK I’ve been reading through the other comments and they say you’re using a balsamic dressing rather than balsamic vinegar- that would make a difference.

In Canada we use vinegar on our French fries if not poutine instead of ketchup. I use lemon juice squeezed on top with lots of salt. I’m very sure this recipe is delicious. The oven you used is very hot 425 F . It certainly made those vegs roast well. Can’t wait to try it. Yum💖

Thanks,less salt,less olive oil,for me after 5 minutes for sweet potatoes I will add the vegetables so instead of 35 minute ,takes only 20 minutes in smaller oven .Energy very costly ,countries are damaged because of their oil.Think of that always .Energy cost lives.

Great! I will try that cheaper store bought balsamic vinegarette because I currently use a really expensive barrel aged version that I buy at a farmers market. Going to try your selection of veggies also, I currently copy my favorite Lebanese restaurant in Houston and roast green/red/orange/yellow bell peppers, yellow squash, sweet yellow onion and small white mushrooms which is also a great combination for anyone that would like to try it.... Roasted veggies are extremely good!

Looks yummy and colorful! Can you use plain Balsamic vinegar? Or does it need to be Balsamic vinaigrette? I am guessing the difference is seasonings in the vinaigrette, is that correct?
Roasted veggies are the best! I especially love doing sweet potatoes, carrots, parsnips and beets( my favorite veggies)& sometimes I add fennel to the mix with olive oil and rosemary. Delicious!

Hey, Rachel! Looking good there, sister! You look like you've reduced your weight by A LOT! Good for you! The veggies look so delicious and I"m going to be making them this week for dinner. Putting in the balsamic vinaigrette is such a good idea for flavor. I've also used Italian dressing and I like it, too.These veggies are so good with chicken breasts marinated the same way as the veggies. It's a good meal for when I don't feel much like cooking.
It is storming right now in Texas, but, tomorrow, I will go to the grocer and pick up veggies etc. for roasting. I love your shows and watch all the time. Thank you so much.
Yum, I usually add balsamic glaze after the vegetables are done roasting. I have never tried balsamic vinaigrette, will need to try this recipe. Thank you for sharing.

Interesting I'll have to try this. I usually use Ranch Dressing Mix powder as the seasoning, just sprinkle it on after coating the Veggies with Olive Oil, and then I add sliced Kielbasa on top of the veggies on the pan, that way the Broccoli doesn't burn, and then it's a full Meal, but I'll try this recipe as a Side Dish. Rachel always has great recipes.

I LOVE the combo of roasted vegetables you did Thank you for showing how to make them I use this combo all the time but pay like almost 5 dollars in the market for frozen combo and when cooked down not really worth it BUT Now I will make them the way you showed us I use them and toss them in my pasta as well when I dont feel like meat LOVE your show Julianna Raleigh NC
