White mustard (Brassica rapa Pekinensis Group; mustard greens or Brassicaceae)
It is called chicory because the leaves tend to be pale yellow and the petioles are white. Chilli can be seen its use in pickles (preserved in a liquid sugar and salt), in capcai, or in clear soups. Chicory has a distinctive yet neutral aroma.
This vegetable is popular in China, Japan, and Korea. In Korea, local cultivars of chicory are used as raw materials for kimchi, a Korean specialty.
