Kirby Allison, Founder of Hanger Project, had the opportunity to visit Petrossian in New York. Alex Petrossian, managing director of Petrossian Caviar, takes us through the steps of serving their special Petrossian caviar.
For nearly ninety years, Petrossian caviar has stood for excellence. This legacy of quality began when two brothers, Melkoum and Mouchegh Petrossian, moved to France and distributed caviar from the sturgeons of the bountiful Caspian Sea. It developed as Petrossian expanded, with a restaurant in New York City and a product line that includes savory foie gras and sweet French chocolates.

As A russian i can tell you that you eat it how ever you like... There is no thing about it. It is food. Eat it...

as an American who dropped $500ish, ordering caviar for my folks anniversary dinner next weekend.. i want it to be special,, so some tips to bump it up.. helps.

I love sturgeon caviar very much, but Petrosyan has it very expensive. I buy from Lemberg - good price and quality.

As a child of Russian immigrants, I have fond memories of having my morning Rye toast with a schmeer of butter and Caspian Ossetra fish roe... (aka blk caviar)

Michael - yes, very. Try salmon caviar as a much cheaper introduction. It’s available in most of the better supermarkets. Don’t bother with lumpfish caviar (even cheaper) as it tastes far too salty and gritty - at least salmon caviar in flavour and texture is comparable to the upmarket black ones, though not as good of course, but it gives you an idea of the taste and aroma and the way the eggs burst in your mouth.

What texture would you compare it to? Do you chew it or just swallow it? Forgive my ignorance, I am nervous to try it.

You chew it, the flavor is inside. The taste and texture is kinda like salty, fishy bubble tea balls for red caviar and a bit more buttery and much smaller for black caviar.

As a Russian, I can say that black caviar is overhyped and overestimated. Red caviar is way tastier, black caviar is nothing more than a status thing.

As a Russian you should know that red caviar is salmon roe NOT true caviar!

I recently had Salmon roe from wild Salmon for the first time. What a difference to the 'regular' Salmon roe. Now I am a fan of it as well.
