This is a general how to video on how to sharpen your knife. Great for beginner's or those who have been struggling to achieve the results they've been looking for.
We discuss how to prepare your whetstones, the angle at which to sharpen, why we choose that angle and talk about the three step process that should be followed on each of the three whetstones we use to get your knives razor sharp!
In our opinion the most important steps to properly sharpen your knife are to sharpen at as consistent an angle as possible and to properly develop the burr. Do these two things and you will end up with a sharp knife.
Please leave a comment if you're confused about anything. We did our best to keep the video relatively short while still providing as much information as possible.

This is a great video for beginners. I followed his techniques on an old knife and the difference is amazing. The knife is so sharp!

Great job... Nice to see something longer than the instagram videos...keep it up... I watched your video again...I've never heard of telling people to use only edge leading strokes... brilliant idea for beginners...it makes sense...I'll have to remember that when I'm showing the younger cooks at work how to look after their knives...and the film yourself idea might be worth a try... You covered all the basics...in a very approachable manner... Sure hope to see more... One constructive comment... flattening stones... I know we're looking at basics....but...it needs to be addressed...

Great video. 👍 When using a knife, what's the sign that it needs to be honed with a honing rod? Is it when it won't cut a tomato with ease? And beyond that, what's the sign that a knife needs to be sharpened on stones, like here in the video? When it just won't cut anything well? Thanks.

I love watching your IG videos of your sharp knives. Hope this channel gets some recognition too! Would you recommend bringing your knife to a shop to fix your knife if you warp it? Or keep at it until you learn?

Thanks so much! If the knife is already damaged I would recommend making it your practice knife. I used my parents knives to practice when I first started learning lol

Really good tutorial! However, theirs any way to clean the scratches on the blade? I rally give my knifes a few of them.

Thanks! To remove scratches from the side of the blade you have to refinish the whole blade. You can do it with sandpaper and similar to sharpening you would use a progression of different grits until it's polished to your desired level. Hope that helps!

nice set of stone, I only have 1000 and 4000, it will be nice to have some new stone to play with!!!! I always keep water running all the time while I am sharping, I don't know if that's right.

The rods don't sharpen they really only hone the blade, you really need both and can use the rod to hone in between uses

Thanks so much! More or less this is what we talk about in my class. There is much more to talk about and other little cues that I give to people depending on what they specifically are having trouble with. I wanted to keep this to around the 10 min mark but I could talk for much longer about sharpening.

Thanks for this simple but clear tutorial. How do I go about an uneven angled knife at lets say 60-40%? Is it as simple as keeping the same ratio in my sharpening strokes 6 on the front for every 4 on the back? Thanks!

Just about tomorrow sharpen tomorrow morning thanks. But I use my chefs naniwa sharpening stone s404, s410 and s450, do these have to be soaked for 10 minutes as well?

Thats going to be preference, I like to use the compound personally because I think it gives a nicer polish. Gage prefers to use his strop dry!

my style of sharpening basically means i constantly get wounded (either from my fingers rubbing against the stone or the slightest bit of the blade getting me). i recently got my first white ceramic stone and it has been tinting red every time i sharpen hahaha (i know this is a problem and i am trying to fix it)

Just take your time and pull your fingers back a bit, while you wanna be close to the edge you certainly don't want to be ON the edge! I still get myself from time to time when I'm in a rush, but I think its worse when you don't realise you're wearing away your fingertips and anything warmer than room temp feels like a red hot pan.

Tried it like the tutorial showed and failed epically. How small is the burr? I could for the life of me feel anything, but I soldiered on thinking my fingers just wasn't sensetive enough to feel one, going though the stones I have. A 1000, a 2000 and an 8000, then I finished on my straight razor strop. Now the test - I put the knife to my arm - nothing. So, well I'll try the paper test and the paper tore where I held my thumb. 😢 I should mention that I tried to sharpen a Kai Shun Santoku 16.5 cm knife with about 60 layers of damascus.

wHEN i WORKED IN MY 1ST jAPANESE RESTAURANT, WE WOULD SHARPEN OUR KNIVES AFTER WORK EACH NIGHT. THEN (LET ME KNOW IF IT WAS BONKERS) WE WOULD HOLD THE BLADES OVER A GAS FLAME UNTIL WE COULD SEE THE EVAPORATION DISAPPEAR ON BOTH SIDES OF THE BLADES. WE WOULD THEN LET THEM COOL A WRAP THE KNIVES IN jAPANESE NEWSPAPER UNTIL THE FOLLOWING MORNING. WHAT DO YOU THINK OF THAT IDEA? i DON'T WANT TO BE SLAVISH (ADDITIONALLY, WE NOWADAYS HAVE ELECTRIC HOBS, SO WE CAN'T DO THAT).

We don't recommend heating up your knives as it could ruin the heat treat, making the knife softer and not hold as good of an edge!

You seem too energetic in the beginning lol. Looking at how you sharpen, especially for beginners, keep the knife in the stone as much as you can. You’re using a push method, not a push and pull which makes it remove metal faster and makes it easier to maintain your angle.
