Hi folks,
This is my method of how to sharpen knives at home for personal use or for professional use in the restaurant industry or for butchery industry.
I was a professional Tally boner for 6 Years in the meat works where we got paid by the number of sheep or beef we could bone out in a set day...!!
In my case as a tally sheep boner it was 110 sheep a day so the faster your crew and my self could bone out the sheep carcass, that meant you could finish work sooner and go home.
Most of the time is was 20 sheep an hour so that meant you finished in aground 6 hours work time a day.
So...To be able to work at that lightning speed ....!
" YOU HAVE TO KNOW HOW TO KEEP YOUR KNIFE SHARP...!!!!
Only top knife hands could make the grade to be a Tally Bonner..!!
That is how I had to learn and understand how to sharpen a knife and to understand the edge concept on an knife, also how to keep it sharp by using a steel to rub the edge of the knife as to keep that sharp edge in the centre of the blade so it would stay sharp as long as It could before I would have to resharpen the knife edge.
Now remember...
You have a greater chance to cut yourself with a BLUNT KNIFE ...! Than a SHARP KNIFE...!!

Thank You!!! I carry a stunning 440C chrome inlaid black wood handled everyday use knife in a gorgeous leather sheath on my hip. Recently, I brought home a beautiful extra-large chub of cured Italian dry salami to share with some friends and my girl. Well~ I pulled the dazzling dagger from my side, the glare from the blade caused temporary blindness as the room fell silent and for a fleeting moment I felt like a real Man. My hand moved the steel cutting edge onto the chub, I pressed in to cut slices but the salami coated with a thick white skin pushed back and I quickly changed my angle of attack which left deep dent-like creases with no penetration. To save face I began to position myself in attempt to hide that my knife that was dull. This caused me to turn red, sweat profusely and aggressively begin a sawing motion on the stick. When I came close to passing out, my incredible girlfriend, to save my dignity covertly slid next to me pulled out her pocket switch- blade and cut in to it like a deli meat slicer. That's what got me pointed in your direction. You're awesome for sharing your knowledge really appreciate you!!!

Having declared my dissatisfaction with this sharpener last night ru-vid.comUgkxDcr-y2Pf6xdnrFHrSP7dl9kpKaCozcSQ I thought about the problem some more. It occurred to me that I might be undoing each attempt at achieving a sharp edge by the repeated attempts. So, I tried to clean up the unsatisfactory result by honing with only positions 3 and 4.Miracle!! A really nicely sharpened chef's knife, more than enough to handle my needs. Admittedly, it did not reach professionally sharpened razor-fineness, but it is now significantly sharper than it was. A bout of breaking down carrots convinced me. So, major apologies to the manufacturer, Amazon, and all happy and potential owners! Follow the directions: don't buy it if you have ceramic blades; and don't overwork your knife blade.

Great.. Remember to press lightly as not to over heat the blade.. You can have a bucket 🪣 of water 💦 to keep the blade cool after a couple of passes on the belt. Cheers

Well done brother , I am a retired butcher/ meat cutter 38 years , I miss the belt grinder but I did keep a nice 3 way wet stone to sharpen my knives .

Finally a knife sharpening technique that makes sense. Watched this four times already. Trying to figure out how to duplicate your motor, belt sander, buffer set up as to belt size, pad size, RPM,s and motor kind and HP. if you could point me in the right direction I would appreciate it. This guy has the magic touch! There's people that try their WHOLE LIFE to learn how to get a knife sharp and never really get the hang of it...sometimes even the masters need specific tools and time... this guy needs a bench grinder and about 20 seconds... WHOA!!!

Definitely make it easier.. Just remember not to push to hard and over heat the blade.. always great to have a bucket of water long side to cool the blade if you do. Cheers 🍻

You can use a bench grinder stre, like many other teqniques. All work better, more frequently you sharpen.

I have watched many videos on how to sharpen a knife, they all talk about the "burr" but never show it. It's more like trust me it's there, you however show the burr in real time and explain in simple terms so anyone can learn. Thank You

Just use your finger nail after sharpening a knife you can feel the burr.

Nice work. Great Aussie Abbott Ashby grinder, and I have the same one. I have had excellent results following your tips on some D2, N690co, K340 and Sleipner. D2 takes a bit more effort but comes up surgical sharp. Most important lesson as you pointed out is to get the burr, and a final strop to remove the burr.

Thanks again. I'm putting handles on various kitchen blades for gifts and they are sh*t from the factory, so doing a lot of sharpening. I also offer free sharpening to all my customers, so having a safe, fast technique makes it a pleasure to keeping 'em happy.

You are an incredible teacher and you deserve to be recognized for what you do. There may be more people, but you are the 1st I've seen who actually showed a "closeup" on how to raise a bur and remove it. I'm a beginner and I've been having trouble with the tips of knives, but with your expertise, I FINALLY caught on. Thank you for passing on your skills and I've subscribed... You're my fav!!

Thank you for stressing the importance of safety and for telling people the correct orientation to hold the knife against the sharpening belt. I see so many people so afraid of the knife being grabbed that they place the knife backwards. Then they can't understand why they can't get it sharp. I just watched someone tell people to use a wood wheel and reverse the direction so it won't grab the edge of the knife.

Will watch out for that as I'm into wood carving and need surgically sharp 1.5" short blades. Made a leather disk fixed to an upright hand drill plus bought a buffing wheel and Flexcut compound. Going by your vid, I don't think they're running fast enough though lol. I also use a leather Powerstrop wheel set up running like the buffer. Never seen the bur come up. Will try a magnifier over my specks! ATB from the UK.

pete wright Hi again. Rpm on the grinder is 3000 rpm.in the video.. I bought a Jewelers miniature bench grinder with a ultra high Finishing compound from Italy its a freedom brand..!... 8000 rpm..!!.with a special wheel that cost $80.00.. Worth every cent..! Unbelievable sharp knives now..here is a link.for the grinder..!! www.jewellerssupplies.com.au/product/4449-foredom-bench-lathe-1-6hp Also paid $550,00 for the special miniature dust extractor also as I have a mobile knife sharpening van that I work inside. I sharpen in many ways, but I've been experimenting lately with buffing wheels on a bench grinder, spinning away from me of course. 1 wheel with 400 grit compound, and a 2nd with 8000 grit compound. I've managed to get my knives hair popping sharp, starting with a semi dull knife, but I'd like to see if it works with a completely dull knife.

Most motors like that, you can reverse the direction by reversing the plug by taking the plug apart and switching the white and black.

That is a good shop, or home setup. I needed somthing much more portiblefor farmers markets. I oped for a MekIta belt sander. I have it mounted upside down ( fixed mounted ). The fineest belts that I can get is 220 grit. I have the speed of the belt sander adjusted. I also never use a dry belt because it will burn the blade. I thurily coated the belt with softened bees wax. Than with a small butane torch I would quickly melt the wax for a verry, verry short time just to fill in the poors of the grit. To make it easier to cleanthe beeswax off the blade I had anold 32 cup coffeepot with heated water so i could wipe the wax off. Next an old fene groved steel to remove tho wire edge. After that I would use a white carmac rod to finnish up. The knife would shave.

Small point of fact Antonio. Scalpels are serrated edged. Same as Stanley knife blades. The teeth break and you dispose of the blade or resharpen to suit yourself. So surgical sharpness is not usually what tradespeople want. Razors are polished. Just terminology but the two forms of sharp edges are scalpel vs razor.

In case of need, with these knifes you always have a good tool if you're at a loss for an answer, I guess. Thanks for the tutorial ! Trouble in Germany is : It's not allowed carriing a knife... nor to use it in self defense... If you or your beloved ones get attacked by whomsoever... you can defence yourself first if you are stabbed -.if ever you are still able to do so.

In my state they passed a law that you can defend yourself in your own house 🏡.. As long as you can prove that it is in self defense and they are capable of carrying out the threat. Cheers

I get about 20 to 25 knives 🔪 per belt sharpened. But for home use you can get more.. It’s up to you..

what i understood, i just need a grinder belt with a speed of 3000 per minute.....and then polishing it.....but, what type of the belt in that machine? same thing with the polishing material plz?

Hi .. 25 grit belt is good and remember to press lightly and cool if in water 💦 after a stroke or two to make sure you don’t over heat the steel. I use the Calaco buffing wheel and Green compound.. to polish off and remove the burr.

I spent two years working in a slaughter house decades ago. I have a lot of respect for others who did the same hard work. Everything you said is true , but most people only have wet stones. I used both methods when I was butchering. For those who have wet or "oil" stones as we used to call them, you use the same technique only a lot more elbow grease. The stone is stationary and the knife has to do the moving.

One thing that you’ve failed to realize is that during the process you’ve undergone, you’ve just put enough heat into the steel to remove the hardness !! I used to use a 1x30 to sharpen until I found out that I was removing the temper!!! Yes it’s sharp but it won’t stay sharp long if you use it often !!! I had to get a grinder with a VFR drive for the motor!! If you’re gonna sharpen that way ,, at speeds over 1800 you’re gonna ruin the heat treat of your knife!! Just a word to the wise friend !!!

I use a similar technique and it works beautifully for most applications. The only things I do differently are, I remove the burr with a leather belt on the belt grinder rather than a buff and I do a final polish of the apex on hardened, polished steel. I do no more than a few strokes with VERY little pressure and doing my best to control the angle so it's just a bit greater than what I've already done. Most people would be unable to feel the difference but I think someone as experienced as you are, will. Give it a try and let me know what you think.

Edmond Dantez Point taken mate..! In the knife sharpening business you are always learning.. I made my own 2 inch wide MDF wheel now that I made with a new mantel attachment for the grinder.!!!! I get a fantastic finish now.. I even turn the old grinding belt inside out replace back on the grinder..!! then put a fine honing compound on.. The best strop belt you will ever get.. Mr. Tony, could you please provide more information on the buffing side of the machine? You have attached an arbor extension there, correct? What is the width and diameter of the buffing wheel? Can you make a suggestion on how to acquire one that thick with the right parameters, right setup? Also, you state in the video that your belt is 2,000 grit, but it appears from comments below that it is 350-grit...can you clarify which is correct, sir? Many, many thanks for an excellent video!!!

Anthony L. Rentz, PE Hi Anthony. The buffing wheel is. 6 inch in height and 1 1/2 inch wide.. I don't know where you live so I can't suggest where to get one..? Yes the grit was 200 not 2000. I now manly use a 350 grit belt..comes from China..! Get any wear between 10 to 17 knives edges done depending on what hardness the metal that the knife is made from.( .I now have a mobile sharpening van now and mainly sharpen chefs knives at the restaurant were they work). ..!...If I try to persist doing any more knives..? You just don't cut a nice edge.. As I have suggested to someone else.. I supplied a link where they can buy one in Australia.. Please reply back if you need any more information that I might have missed telling you. Regards Tony.👍

The best way to real sharpening the knifes and even razors is:USE the felt.Disc of felt medium hard,rather more soft then hard,and diameter about 20 cm.Use polishing paste.Important thing is that direction of rotation of your grinder should be out of you.That way I've sharp my razor and sometimes I use it for myself shaving .One more very important thing:for razors you have to use small felt disc which is adequate to the curve of the razor or a bit smaller.

Great inspirational video! I really like to build the same system and followed your link on Multitool belt grinding attachment. You pointed correctly that rotation of both belt and buffing wheel should be away from operator. On all related RU-vid videos I saw that rotation was always toward operator, which is obviously very dangerous for unexperienced user. Please explain, or may be produce a short video how do you reverse belt grinding. Turning machine 180 degree is not helping, because vertical flat grinding disc will be in front of operator. In your video it is opposite from user. Please advise. Thanks!

Hi.. If you unbolt the base in a bench grinder.. all you have to do is turn the base 180 degrees and re attach the base and then the turn on switch is in the front and re bolt the bench grinder back and you grinder will be rotating away from you.. Then reattach the grinder belt to the right side of your grinder and now it will definitely be rotating away from you.. Hope I have explained it clear enough.. Cheers Tony 👍🤓🔪

I am still putting your advice to work and have improved drastically Famo. One question that I need help with because I am using a belt sander ... When taking the burr off, is one supposed to hold the "tip" of the knife "into" the sander or hold the knife in the same angle it was sharened in? Any advice would be helpful

When testing the sharpness of a blade is grippy-ness something desirable? I usually mimic my ex father-in-law who runs his thumb perpendicular to the blade's sharpened edge and says it feels slightly rough when sharp.

Tim Sexton Hi Tim.. The degree depends on what the knives is being used for... A boning Knife day 10 to 15 slicing knives 15 to 30 .. A factor of blade thickness and depth of blade.also matters on Knife angle.. When I polish the knives..!!..it’s usually the angle I grind it at plus a touch more till I see the burr come up. I work it back and fourth till the burr disappears.. I even pull the knife blade through a square piece of pine wood to help pull off the burr to speed up the process..of wearing off the burr edge..! DON"T LET THE KNIFE GET TOO HOT. You will ruin the tempering and it won't keep the sharp edge for long unless you anneal it afterwards.

Annealing the metal is the same as ruining the heat treatment, annealing softens metal, not hardens it.

Have you thought of building a water tray that the belt runs though to keep it cool.You can probably make a tray out of a 4L bottle and it will make it near impossible to mess up the heat treatment on the knife. (As long as the grinder is water proof.)Might be cool to try out.

I would keep that belt for just sharpening knives 🔪 I only can sharpen about 20 knives 🔪 to one 300 grit belt for best results.

The type of edge you need and put on cutting instruments depends on what job isn't. Thin razor edges are not always best. My father-in-law a butcher knew this in his job. He used different knifes and other cutting tools for different jobs.

Hi David Davis I was a tally boner for 15 years.. Had to bone out 110 sheep a day in 5 half hours so you are right that you have different angles on your knives 🔪 for different cuts or boning out. Cheers Tony.👍🤓🍺🔪

300 grit and all depends what knife 🔪 you use for boning or slicing.

An angle of 17 to 25 is what you should aim for, and 22 is the more accurate measurement.

Remember.. Only press lightly on the Belt and have a container of water 💦 to quench the blade in as to keep it cool. Over heating will displace the temper of the blade and definitely will not stay sharp for long.

@@Famo59 you tray 120 grit then 180 and finnally stopping with paffing compound. I thinck scratch for 180 grit take the blade long time work

wow Antonio that is very fascinating and resonates with me you are a master of sharpening like the samurai Swordsman yes I do see the bird I see how you polished it off I see the white line. this may Amaze you but I am intimately familiar with all these procedures as a Sawyer and a hillside brush cutter for almost three decades in the San Francisco East Bay Area I have been cutting brush and Tall Weeds for fire safety and mitigating fire fuels with the Husqvarna brush cutter saw and chainsaws the brush cutter carries a 14 inch diameter three-point forged steel blade this blade can be sharpened in the field with a file or for best results I apply it to my bench grinder on the sandpaper paddle wheel and then buff The Edge out on the Cotton buffer wheel with Rouge and it provides a mirror finish and the edge last 10 times longer keep in mind the impact blade on the brush cutter is filed flat at the impact Point providing two cutting edges because it is an impact blade not a steak or vegetable knife and when I watched your video of you sharpening your knives with your two-stage process I recognize something very extra-ordinary and Sublime about you Tonio thank you and your partner Jon
