You should try the East Hampton Shucking tool, it's the safest and easiest way to open oysters. You dont hold down the oyster down with your hand. It keeps your hand away from the knife. You won't get hurt.

In Spain (e.g. San Sebastian, Bilbao) and France (all around Brittany) the pros use a stainless steel mesh hand glove.

What should one do to the oysters before shucking them? I feel like have the time that I have a subpar oyster experience, its because there's still some sort of unpleasantness on the outside of the shell, which gets in my mouth while I'm sucking the belly down. Also, when the adductor muscle is particularly developed, is there a technique for removing it? It often strikes me as cartilaginous and unpalatable.

Good but not always possible as some oysters shapes can be different. You can also use the same technique with another "point of entrance" : push the blade on the first third of the length of the right side of the shell (based on the fact you hold the oyster the same way on the video). By doing so, you open the oyster directly by cutting the muscle. The technique shown on the video as the disadvantage of gliding the blade inside the shell from the back to cut the muscle on the top right (and for a newbie, there are chances to damage the flesh). I adapt the method depending on the shape (believe me, I just open 12 dozens for Christmas)... I also strongly recommend to protect your hands with a towel, there is no way a simple plastic glove can protect your form your own force applied on a knife. Use a table or the sink, put down on it a towel, lay your oyster and use your body weight on your knife : the video shows a technique that works only for few oysters. If it is your first time, use knives with protection (they have a metal edging between the hand and the blade), the one shown on the video are the best but once again, as a newbie, these knives can be dangerous.
