Young feller, great job, i'm 57 yr., old irishman from rural Kentucky, our smokehouse is the size of a small house, we smoke hams, & dry age beef & deer in there. A tip, if you like garlic, get a fresh head/bulb or 2, skin em' & cut cloves in half, puncture chix about an inch deep with a paring knife, stuff in 1/2 clove, do that all around the chix, you'll love it, been cookin' since i was 9. I use about 75% hickory & 25% apple wood cause it is free on our place, just do the work., btw in Ky. we call chix yard birds, lol

Jeff over here in Australia we have a freshwater crawfish called redclaw. Tails go well if you soak in sweet chilli sauce in the shell or half the tail. Remove and put on rack.Smoke for 20min or so . Might work on your crawfish over there 😁
Ok when can I meet you for a hog or a turkey or both or even deer oh yum. I am just at the Ala and Tenn line. Seeing all the hunting you are doing and cooking I so jealous not being able to hunt and get all that fresh meat. I found Hannah's site yesterday and been watching so many of hers and then saw that she made you a site and now been watching yours. I just started watching yall and have enjoyed it we smoke alot to and we wife and me use bacon grease instead of butter and cavenders seasons we call it the artery closer it is great and juicy
Love the End. Looks amazing Jeff Do a Turducken in the smoker . At Deer camp we do Turkey 🦃 Breast stuffed Venison tenderloin 🦌 stuffed pork loin 🐖 wrapped in bacon 🥓 on the smoker.🍴 You could use Duck ,goose, Grouse even chicken.
Jeff I built one similar to that, only difference is I used a 30 gal barrel for my fire box. I been making deer sticks in mine. It looked like it was hotter than a $2 pistol in there!
You got to try Smokey Limeabeans with turkey neck. We use a Dutch oven to cook it in and leave the lid off. Use plenty of butter and onion. Hope you enjoy

next time try low sodium dales it is thick and alot less salty i do mine the same way but i put a pinch of sage in the injection looks great love the videos keep it up
Jeff thanks for the video on the smoked chicken I like the idea. Next time you smoke a chicken or a Boston butt try a little Sassafras in your fire just for flavor
