If you struggle with stacking cakes or worry that they won't survive delivery, this video is for you. I'll show you exactly how I stack this SIX tier buttercream wedding cake, and deliver it FULLY ASSEMBLED! And this no small cake y'all, it has 300 servings!
I realize a 300 guest wedding sounds crazy during Covid, but don't get uptight, because there were way less people at this wedding. But the bride wanted a huge cake and her mom wanted lots of leftovers to send with family members.
To stack this cake, I used a mix of plastic poly dowels and jumbo cake straws from Hobby Lobby. I also always use wooden skewers to lock the tiers together.

I've been cake decorating on & off for 40 yrs. I actually don't like the idea of putting the fresh leaves or flowers stem straight into the cake unless they're edible flowers, herbs, vegetables, etc. In this case, eucalyptus leaves are probably fine but other fresh plants & flowers are toxic and should not touch part of the food that will be eaten so I usually wrap their stems with foil or cling wraps or straws, etc. Anyway, you did a great job creating & transporting such a massive cake. Lovely cake & set up, nice view!

I typically place straws in the cake and put the stems in those. Because of Covid, their guest count was cut way down, but they still wanted to keep the large cake even though they didn’t need that many servings. They also used silk roses, and while baby’s breath is technically toxic, that’s only when directly ingested.

I was terrified the first time, too! But it’s made to go through easily. Just be sure to turn the rod as you pull it out of the cake when you get to the venue 😊

It looks Very secure, with those wooden dowels going between layers through the cardboard base, binding them together, then that jumbo cake safe- Wow. That is the Only way Large cakes should be transported! I've been doing cakes for a bit with kroger, largest I made was like 5 layers, two tiers. (no support, no dowels, no cardboard, guess how it turned out, LOL) Will be making my first wedding cake in july! :O a 3 tier 10" 8" 6"

Good luck on your first wedding cake! Tiered cakes can seem scary, but as long as they are properly supported, they are perfectly fine. If you don’t have a CakeSafe, I would suggest adding a dowel in the center of each tier. And definitely use the skewers to secure the tiers together.

Hi question about the cake safe. I am using foam boards .3 inch thick as my base on each tier. Some people say they have problems with the foam boards using a cake safe. Have you had any experience with that when you have to remove the rod is it difficult?

Hi there! Such a helpful video!!! I have a three tier wedding cake to make soon but the bride wants it to be whipped cream. Her wedding is next month so it will be fairly warm and an outdoor wedding. How long do you think it can be kept out?

Whipped cream is tricky. I don’t even offer it because of the stability issues. The cake will need to remain refrigerated as long as possible. If that means keeping it in a refrigerator on site, and bringing it out in time for the reception, I would definitely suggest doing that.

The skewers do go down through the cake boards. I used them to lock the tiers together as an extra precaution to keep anything from sliding. I find it especially helpful since I use parchment paper rounds between the top of each cake and the cake board of the next cake up. The parchment keeps the buttercream from sticking to the cake board.

They are just regular cardboard cake rounds. The skewers are sharpened, so they can be easily tapped through the boards to lock the tiers together.

Thank you! This cake sat out in the evening for a few hours, but it was September and not too hot that day. This was an all butter American buttercream, and the tiers were refrigerated overnight before I stacked the cake. You could do half butter, half high ratio shortening to help with stability and avoid melting. And I believe that Swiss and Italian meringue buttercreams may actually be even sturdier once refrigerated because of the high butter content. The longer you can keep the cake refrigerated, the better.

May I ask if your cake boards have center holes , or is that not necessary. Also, I’m planning on using a Masonite cake board instead of a cake drum, do I need to drill a center hole? Thanks so much! I love your video!! So many helpful tips!

My boards do not have center holes. The rod can break through them easily. With a Masonite board you’ll want to drill a hole. Just be sure to make it a bit larger than the rod so it can pass through easily.

It really depends on the weather and the type of icing you are using. This cake had American buttercream and probably sat out for 4-5 hours before being cut. I suggest keeping cakes refrigerated as long as possible before delivering.

Not specifically. However, if your cake is chilled when you place it in the Cake Safe, it will help to keep it insulated.

Caterers usually disassemble a cake as they cut it. Most will remove one tier at a time. I just let them know that there are skewers locking the tiers together, so they should lift the tier straight up to remove it. And the cut servings around the dowels.

If you can keep your cake chilled before delivery that helps. If you’re using a Cake Safe, chill the cake, put it in the safe and wrap the outside with foam or aluminum foil. That will help to insulate it. Cake Safe does not recommend using dry ice in the safe, but some people do use cold packs. It’s not near as hot here in Kentucky, but I’m sure you could reach out to some other Texas bakers for delivery tips on the heat.

Hi dearie a quick one, usually we freeze the frosted cake and insert flowers only prior to delivery since we can't freeze the flowers together, question is its very hard to poke the flowers when the cake is frozen. Pls help

I would suggest taking a sharpened wooden dowel and poking a hole in the cake first. Then insert a small piece of a straw and place your flower stems inside the straw. The sharpened dowel should push through the frozen cake easily enough.

Yes. The Cake Safe has a hole in the bottom board, so the rod goes all the way through the cake, drum and board to keep it completely secure.

Thank you! When caterers disassemble the cake, they just place a spatula under the board of each tier and lift it off. Doing that leaves the skewers sticking out and they can easily pull them out. I’ve found that it’s an easy and safe way to keep the tiers locked together without much difficulty.

Hi there! How does the cake safe ensure the cake does not tilt from side to side or tip over when driving through uphills or bumpy roads?

The steel rod goes through the lid, all the way through the cake, and out the bottom of the base. So even if you go over a bump or up a steep hill, the cake won’t slide around in the box.

That is all part of the Cake Safe. It’s a hard plastic base with corrugated plastics sides. The plexiglass top goes on top, and the steel rod goes all the way through the cake and base to keep the cake from shifting. You can find more info about it at CakeSafe.com.

Please I have a question about this stacking as I want to make a wedding cake for my friend and the stacking freaks me out, was the Still cake board underneath each cakes layers ? I meant that thin board you were using to measure where to put the dowels, did u put the thin board underneath the cake ? Or u uses the parchment paper only ? And please ma'am I won't be able to get that Rod that u use to transport the cake? Does that mean that I should use dowels for the center when am stacking? Thank in advance for answering all my stupid questions. Am sorry .

Each tier of cake was already on a cake board. I was using extra boards to mark the tiers for the supports. You definitely want to have each tier on its own board, otherwise it will be too heavy and the bottom of your cake will collapse. If you don’t have access to a Cake Safe, I would definitely suggest using a center dowel. If you’ve never transported a tiered cake, you might want to stack on site when you get there. That will be a little less stressful for you. Hope that helps!

I have not tried dry ice, but I do think that it could work. I have seen other people attach cold packs to the interior walls as well. I would suggest getting some Cool Shield Thermal Bubble Wrap. Make sure your cake is very cold when you box it up in the Cake Safe, and then attach some cold packs to the bottom/walls with duct tape. Just keep them close to the base so you don’t risk one coming loose and crashing into your cake.Then I would wrap the entire box with the thermal bubble wrap. That should keep it cool enough in the box.

I usually deliver my cakes 2-3 hours before the event starts. I will often have the cake completed several hours before we leave.

The poly dowels are about 1/2” or so in diameter, and the skewers are just normal ones for grilling. You can purchase the plastic Wilton dowels at most craft stores. Just be sure to carefully cut them so that they are all the same length. Good luck!

I have a Honda Odyssey. If you look on the Cake Safe website, they have recommendations for clearance. Definitely measure your vehicle before placing your order.

I use the parchment paper to keep the top cake from pulling the buttercream off when it’s disassembled. It doesn’t slide because I use the skewers to lock the tiers together. With out that or a center dowel, it could slide on the parchment.

Nope. Some people do that, but if the cake is not going to be moved after set up, there’s no reason for it. Especially since I use skewers to lock the tiers together.

This is great ! I have to deliver my first three tiered cake next weekend and bought a cake safe for transport. Once you pulled out cake- safes center rod did you place a new one inside your cake for continued stability at the venue?

No, I never add a center rod. The dowels provide all of the structure’s stability, and the skewers keep the tiers locked together. I would only suggest adding one when you set up if the cake is going to be moved during the event.

It depends on the type of cake, climate, whether it’s setup inside or outside, etc. I keep my cakes refrigerated right up until the time I box them up and deliver. For a typical wedding here in Kentucky, the cake may be set up for anywhere from 4-8 hours. That gives it plenty of time to come up to room temperature. For outdoor weddings, I always check on the weather. If it’s really hot, I may wait to setup right before the ceremony starts. For those weddings, I always suggest they cut the cake early in the reception to avoid melting. As long as you have a room temperature stable cake, filling and icing, the cake should be fine setting out for several hours.

My problem is to pass it from the cake box to the cake stand , because cakes of 4 tiers or more are super heavy and when u pick it up the base board bends if u pick it .:(

That part is definitely tricky! Just be sure to use a sturdy cake drum or multiple cake boards glued together. If your base is solid enough, it won’t bend when you pick it up. And also be sure to bring help! I’ll pick up a smaller 3-4 tier cake and move it myself, but anything larger requires 2 people to move safely.

Hi! I'm a bit nervous as i will be making a 6 tier cake with sizes 6/8/10/12/14/16. If ever the sizes 10 & 12 are dummy. How will i stack the tiers? The real cakes will be covered fondant. I don't have cakesafe, do i have to put middle pipe to hold all tiers including the dummy ones? Hope to hear from you soon. Thank you.

Hey there! I would suggest drilling holes in the center of your dummy tiers. Then you can use a long wood dowel and insert it all the way through the center of your cake. You’ll just want to be sure to sharpen the end to make it easier to go through the cakes and boards. Also, without a Cake Safe, I would suggest stacking it on site. Good luck!

I use parchment paper between the tiers. It keeps the buttercream from peeling off the cake when it’s disassembled.

I was told that eucalyptus is toxic and shouldn't be put into a cake without tape. Is that true?

There are some that say not to use eucalyptus or baby’s breath at all on cakes. However, I have found that when it’s only being used on the surface of the cake, there isn’t much chance of harm. The florals would be removed before cutting the cake, so it’s unlikely that they would be in direct contact with much of it. But that’s something that should be discussed with the client.

I often slightly push the stem in to the cake. For most greenery, you can usually just wedge it in between other flowers. I like to bring extra straws with me. I’ll just cut small pieces and insert those into the cake, and then place my flower stems inside the straw. You can also wrap the stems with floral tape before inserting in to the cake. I hope that helps!
