This is part 2 of my cast iron cookware series. This video captures how I would take a rough piece of cast iron cookware, and... restore it? Clean it? Rehab it? Idk, but we make it better than it was!

3:50 Starting the process
5:00 Supplies that we are using
8:45 Doing this on a NEW pan?

If you can't fix the cracked one for cooking, you can do what I'm doing for my niece. When my mom died, my niece wanted some of her cast iron. There's one that's cracked all the way across the pan. It can't be fixed. So I'm going to drill a hole dead center, get some clock parts and make a clock out of it. So she'll still have the pan, but it'll just be a clock that hangs in the kitchen

Really good tip. Thanks. When I was growing up, my mother used this technique. I would like to point out one thing. I am a PhD research chemist, so I do have a chemistry comment. For starters, you are absolutely right about the exothermic nature of acid-base reactions. However, lye (sodium hydroxide) is a strong base, but the acetic acid in vinegar is a weak acid. Strong-weak neutralizations are not strongly exothermic. Strong-strong neutralizations are VERY exothermic. That said, I think your safety precaution of not neutralizing sodium hydroxide if your skin becomes contaminated is prudent for people who are not chemists. Thank you again for your work and tips!!

I use soap all the time. Especially after I strip a pan. It can also be used on a well seasoned skillet. It will NOT take off the seasoning. I have around 100 cast iron PCs, that I use probably 15 weekly. Good point about removing the excess oil. Most people use entirely way to much oil. Great video for the beginners.

People all have different methods. There are different ways. may use to much oil...but I always pour it out and wipe it down and turn it upside down in the oven to let the excess drip off. I'm with a group that will kick you out for using this method.

Every cook in my family uses soap(usually Dawn or Ajax) and a washcloth to clean cast iron after every use. It doesn't hurt a properly seasoned piece at all.

The cold water rinse in the end simply cools down the skillet which slows down any chemical reaction. In this case, you have bare carbon steel, water and oxygen which results in rust. If you rinse the skillet with hot water you can watch it turn yellow within seconds. Using cool water gives you enough time to dry it up and put it into the oven before the flash rust builds up.

Does the lye lose its effectiveness after a time? Could you just spray it, bag it and let it sit for 5-6 days or does the lye lose it's Juju?

I really appreciate the detail in your video. I mostly have vintage Wagnerware , but a few other pre 60's ones. I love them all, and am in the process of smoothing up some of the new style pre seasoned skillets. Last week I found a square Wagnerware skillet in our old pots and pans. Slightly warped but is a great cooker. Again thanks for the video.

Great video! I'm going to try this method as the oven clean cycle method causes my smoke alarms to go off and subsequently causing my dogs to freak out. So I think the easy off method may be a good alternative for me as I have a couple old Griswold number 10s I want to restore. I was wondering since the oven cleaner is used to clean ovens is it possible that I could spray the skillets down and place in the oven at whatever temperature the can requires you to use and clean it that way or is it better to put it in a bag the way your video instructs. Also I was thinking that since the trash bags don't resist the heat very well I wonder if it's possible to use one of these oven cooking bags to put the skillet in and ramp the temperature up in the oven to the required temperature I've never done this before I'm just wondering if that's a possibility

Just found you by searching. Older lady trying to restore 4 cast iron skillets and 1 small pot. All are quite rusty but do ring. 1 skillet (Erie,PA.,USA with the number 9 on opposite side) sat in the sink with half water half white vinegar for about an hour. Quite a bit of rust came loose. I had scrubbed with sos pad before soaking. Decided it might be wiser to get online before going any further. I'm planning to try the baking soda and vinegar method from another video so I don't use a whole gallon jug of vinegar. I will most likely have to go the oven cleaner method because the gunk on the outside is so thick. 2 of the skillets are Wagner, 1 has that ring on the outside, 1 pan is totally unmarked on the bottom but on the top of the handle it says never break. I can't tell what is on the bottom of the pot Because that gunk is too thick. I saved your video and I will no doubt go back to it many times before I finish this project. I plan to use the pans on a cement block rocket stove

Just 2 comments. Vinegar is actually the same ph as your skin. Meaning it will help neutralize the high ph of the lye in hydroxide. Secondly lye is soap but you choose not to use SOS pads due to the soap.

Sand paper can work, but it can affect the metal itself if youre not careful. You can also try to heat the pan evenly in the oven, the gunk MAY come off/loosen up with high heat.

Why do you go to all that trouble. Submerge the pan in vinegar. Get a large enough plastic container to hold the pan and cover it with vinegar. The soaking time goes by how bad the condition of the pan is. Each day you skim off the rust bubbles that float to the top. Then you can take steel wool or a wire wheel on a drill to do the finial cleaning. The vinegar is all you need and no lye is needed. Let the safe vinegar do all the work.

A bit of cautionary advice to people trying this out for the first time: Do NOT, and I MEAN IT, DO NNNOOOTTT skip the step of wiping off as much oil as you can, AND doing a second wipe-down after a few minutes in the stove after you first put it in to bake. Also, make sure your pan is upside-down. Why? Because excess oil will "bead up", and you will end up with an un-even, spotty mess instead of an even coating. Also, it will not polymerize correctly. The result is a spotty, globby, sticky MESS of a coating that will COME OFF IN CHUNKS when you cook or clean the pan! You do NOT want this. It's a BITCH to have to strip and re-season it all over again. Finally, I have tried several oils and temperatures and have found grape seed oil and an hour at 500 degrees to be the best. Again, you MUST give the pan a second, thorough wipe-down after a few minutes in the oven or you WILL get beading and it's unpleasant consequences. This part cannot be rushed. It may take many times through the oven to get the season level you want. You just have to deal with it. Rushing is a NO-NO! Also, never use dish soap on your cast iron after you season it, just a salt scrub and maybe a rough fabric pad then water rinse, thoroughly dry, then apply a bit of oil and rub it all off before you put the pan away. Don't use steel scrubbers or chain mail: this will wear off or chip your seasoning.

Faster and easier? How long to find a good video, watch it a couple of times, go to the store (I'm sure it would take me 2-3 stores) buy the required tub and hardware, put it all together, use it, then clean up the whole thing? That would be good if you have many rusty things, but for one or two pans, the spray on method is obviously much quicker and easier.

@@daniellesunley4807 One of the risks you run using the self-cleaning cycle of your oven, depending upon the amount of crud and scale on the outside, is a creosote like fire in your locked oven. I have cleaned heavily compacted skillets on my outdoor grill, which only heats up to about 600 degrees, and watched the crud ignite and burn until it turns to ash, in about 3 to 5 minutes. The self-cleaning cycle on today's modern stoves can exceed 8 or 900 degrees. Just doesn't seem worth the risk to me!
