I believe tannic is used to describe the flavor that tannin compounds have, very astringent flavor. If you’ve tried a red wine, especially an old world variant or a drier vintage, you might have experienced it. This is different from the “mineral” notes but it’s kind of sour or metallic flavor and makes you want to suck your cheeks in. Note that tannic/tannin can also be a reference to the role of the compound in the tanning process of leather and textiles. I don’t think that’s how it’s being used here though. Same thing, different industry and application. Hope that helps!
