How do you calculate your threshold if you are new to running? Also how to decide how many days per week to run if you are beginner, intermediate or advanced at running?

A good estimate for threshold is where you start to breathe heavier. It’s called the talk test. If you can speak the pledge of allegiance for example without having to slow down to breathe more than you are aerobic but you might be at or above threshold if it’s difficult to say

Why a rest day after the long run day instead of a rest day before the long run day?

You could go either way. Ideally the long run is actually at a low enough intensity that it’s recoverable with typical training
