Great info man. I just got an offset smoker and realized I had no clue what I was doing. I think you gave me enough to get started. Also, never thought about the injections and oranges.... Stuff to take it up a level.
Yeah man the electric is convenient to use, it's like a oven. but these offsets take practice and patience for sure. I'm a fan of the offset now. fun to use for sure. the chicken tasted awesome also.
yes sir they turned out better after each try, my first ones were good just not enough smoke ring but tender and very moist. now they are coming out even better brotha....thank you

Great Video, never tried the offset smoker, I have a propane smoker. The offset will hold way more meat for smoking, gotta get one. Thanks for sharing your recipe and the video
Good video brother, nice pit you got there. I'm a recent member of the offset pit crew but I've been cooking on charcoal for years. I'm looking forward to doing a butter injected chicken like this tomorrow. I'm using a new Oklahoma Joe Highland, and I know that your pit is an original New Braunfels, much thicker than mine. A good pit is all in the metal, not the paintjob. Cheers.

Hey partner use less fuel and open the door a bit on that side box so everything can breath. Bring up the temp slow and steady using less wood (a lot less) and you’ll get a beautiful color on that skin and cooked through perfect. That chicken sure was juicy though!!
Butter is tricky, but if you don't want a black bird don't use butter unless you keep the vents wide open. White smoke makes the skin black when you over butter the bird.
Wow , we are building a home . So we are half in a storage bin and half packed. Running low on room we gave my grill away and I am getting a grill something like yours. Great vid bro...iv been researching on offset smoker for about a year now and now im gon start building my own. So my question is, does it make a difference if i build mine in a hexagon shape and not a cylinder shape like that?
Kelvin Iseh man I really don't know why it wouldn't be getting up to temp unless your heat gage is broke. I would have to use it myself to really trouble shoot it, sorry im not much help, good luck
Dang thing looked burnt to a crisp but I know that was just the skin. So any way to do that where it's golden brown and fully cooked instead or charcoal black?
Texabamans Country Life you can just wrap it up in foil after a couple hours, usually smoked chicken turns out darker bc if the smoke, unlike in a oven, so if u wrap it sooner it won't get as dark, but I don't like the skin on smoked chicken anyways.
James Michaelis yes you will like them, best advice I can give is get one and just start smoking. I have anther video out that I go over the basics in under 5 min u should check it out also. hope you get to smoking soon
I do things a little different than you do! First off, I don't use one of those probe gizmos, never found a need for one! Second I run my stack dampener completely open, I adjust the temperature from the vent on my firebox! I smoke my chickens at 275 degrees allowing 40 minutes per pound. I want you to know, there is no right or wrong way to smoke meat. You do it the way you like. I am just letting you know the way I do it. The chickens looked fantastic. I know they smelled good.
