Once you fold the top and bottom over and rotate it then cuts to a completely different look where one of the edges is unfolded. If they are folded it's really skinny
Heat the tortilla on either a comal, a dry skillet, or an open flame (I prefer open flame). It's quicker and more convenient than the microwave, and creates a light, tasty char. Do heat it more than how it looks in the video, as it still looks a bit stiff. When doing the open roll, you can literally roll it instead of folding each flap once inwards (it looks to loose). This allows for a bit more filling. First, fold one flap in, then fold the bottom up, then you can grab the stuffed part and roll it snugly. Voila!
It is easy enough if you want your tortilla to be a bread with condiments. Being able to contain a larger quantity of ingredients is another challenge altogether. I am choosing tortillas to make it easier to eat healthy, so I am trying to stuff a lot of vegetables in there.

This actually really helped, I love the closed wraps! Apart from I forgot to put the tortilla in the microwave, so I had a slight crack in it when I started to roll. Does it not go dry by warming it up?
0:46 is where I have trouble. Tucking it in as she rolls it does not work for me. What size tortillas is she using? Shouldn't make any difference should it? They are all round anyway.
just fold it in on the sides, then tuck it in and roll, you don't have to start at the top and bottom and rotate it, its more efficient for high speed food service to skip the first step.
My problem is they don't make tortillas big enough for me up shove all the salad and chicken inside it. And I don't want to make 2 or 3, I want 3000mg's potassium worth of green salad to be eaten in one wrap.
