We visited the Đông Ba Market in Huế, Vietnam, to indulge in the delicious bún bò huế made by the famous "Huế Lady". Bún bò huế is eaten all over Vietnam but Huế is where it all began.
Originally established in 1889 during the Nguyen Dynasty, Đông Ba Market is a traditional market in Huế, Vietnam. With a history of more than a hundred years, the market became a landmark of the former capital city of Vietnam.
This hot, spicy and textured noodle soup showcases the vibrant culinary heritage of Huế. This dish is known for its rich and deeply flavorful broth made from beef and pork bones simmered with delicious herbs and spices, including lemongrass, shrimp paste, chili, and fermented shrimp paste.
"Bun" refers to the soft round rice noodles, while "bo" means beef, which is the primary protein used in the dish. However, what sets this bún bò huế apart is the addition of beef bones, blood cake, and and crab balls, giving it a deliciously rich and fragrant taste.
