HUGE CABINET SMOKER BUILD! Another build video :)

This 36" wide, 24" deep, and over 6 feet tall cabinet smoker was a blast to build! It has 10 cooking grates! I built this out of 11ga (1/8") thick steel for the most part. Details are below. This project is what motivated me to build an overhead bridge crane in my garage to help with future heavy lifts. This thing is a pig! Thanks for watching! Nick

Dimensions:
36" wide x 24" deep x 78" tall (Smokestacks)
Cook chamber has 10 slide out cooking grates that measure 32" wide x 23" deep. 4" spacing between the cooking racks.
Base is made from 2"x2"x1/8" wall square tubing. Top base plate is 3/16" thick and bottom is 1/8" thick fully insulated.
(4) 6" swivel and locking casters
Main cook chamber is made from 11ga (1/8") thick mild steel.
Fire box door is made from 3/16" thick mild steel
Smokestacks are 4"x4"x1/8" wall square tubing
4 temperature gauges

It's likely going to take me another year of saving up with my current job as a welder but I definitely plan on setting up my own workshop, to fabricate and weld as side gigs for extra money.

Nice work! Been looking for either a traditional offset smoker with a vertical cabinet over the firebox or a vertical smoker with removable heat shield/deflector. This would allow low and slow in the offset or a vertical cabinet with a heat deflector or remove the heat deflector and go hot and fast directly over the flames in the vertical cabinet situated over the firebox. Love having the option to hang ribs and chicken directly over the hot coals.

Thanks Gene! The traditional offset builds with warming cabinets above the firebox are really nice. Plus having removable or adjustable diverter plates so you can use the warming cabinet as a vertical smoker/direct fire cooker is an awesome way to go. I've yet to build one like that, but I know Shirley and TMG pits do that right now. Greatway to be versatile in such a small foot print.

Glad you like it Johnny! Powder coating would be an option, but I'm not certain how well the bottom firebox area would hold up. If insulated it would hold up well, but not being insulated it might just cook off.

Should have designed and built a sturdy framework first, then weld the sheet metal to the frame. That's how you avoid warping.🖖😎👍

That gap wasnt a big deal. Throw some rope gasket on there and it woulda been fine. Looks good though.

Nice cooker, did you paint or season this cooker of camera? If so what's your is your process for both painting and seasoning?

Thanks Dave. I seasoned the exterior with spray vegetable oil off camera. I light up some coals and get the entire unit up to temp then spray on the oil. Seems to work ok. I like the linseed oil look better but that stuff stinks terribly while applying it. I like the concept of the vegetable oil being food grade as well.

Yup no problem. If constantly cooking at those higher temps it may be good to use thicker metal though. Just for longevity. 7ga would be my suggestion

On this smoker is there one plate or two plates between the firebox and cook box, or a plate and a water pan.

Hi Joe, Just the water pan which is 1/4" steel. It sits directly above the coal basket. Above the water pan is the "funnel" structure which basically funnels all of the drippings into the water pan. This also creates a tortuous path for the heat to go through so there's no direct heat in the cook chamber. Hope this helps!

I built the base but purchased the top from weldtables.com. I actually have a build video of the table base but was pretty crude and not very well done :) You can check it out on my channel if you'd like. Certiflat is the brand, I think. They're local in MN so was simple to get and relatively inexpensive. Been a good little table.

Yup they are built for ribs and sausages mainly. However, you can just pull out a few to gain more height if cooking pork buttes or turkeys. 4" spacing between the racks.

Your door issue is solved by adding firebox door liner should be able to get the same place you get the mineral wool insulation that you put in the bottom. Why didn't you insulate the sides and top?

That bow in the cook chamber was a bit too extreme for door gaskets to fix. It was close but not quite there. I didn’t insulate the rest of the cooker due to costs. Had to keep it relatively inexpensive for the customer.

@@mike_ny1 I would make sure you have enough air pressure and would suggest dragging the tip directly on the work surface. I've had mixed results with standoff attachments in the past. Plus making sure your surface isn't all rusty helps as well. A good ground is vital.

@@fabmakebuildcook6274 Thanks- cutting clean steel. I will continue to practice with it. Straight cuts are okay - went to do circle with a circle cutter and was junk. Fortunately I smart enough to try on a scrap piece 1st.

I would not use any steel sheet thinner than 1/4 inch. Anything less warps.

1/4” is for sure more sturdy. Twice the price and weight though. This thing’s still cooking quite a bit with no issues so I think it’s ok

I would not use anything less than 1/4 inch steel. Anything less will warp.

So I'm looking to build my own can't stand having to buy someone else's work when I can do it myself but do you find it easy to build it in a box then set it up cause I wanna fully insulated mine cause if the Canadian winters

Yeah building as a separate box then standing up would be easier if you have lifting equipment. I didn't have anything at the time of this build so just built everything in place. It is more difficult and a bit sketchy. Good luck on your build.
