Well, I'm too late for anyone to read this, but the person frustrated with people calling a pile of tortilla chips with a bunch of haphazard toppings nachos and that they should be spread out;. They are right! When I moved out of Texas I was horrified to be served what I considered gas station "nachos". Just a big pile of rapidly cooling disappointment glued by cheese into a mass of sadness... In Texas, you are served "Nachos Compuestos" a large hot metal platter (on a wood tray) with individual chips perfectly topped with your favorite items. They run it under a salamander to heat it to perfection, then use a piping bag to add guacamole and sour cream i(f you so desire). Each single chip is orgasmic deliciousness! The steel plate keeps them warm as you sip your Margarita, the most perfect cocktail on earth, in between each heavenly individual bite!
