MAKING OF MUTTON DUM BIRYANI
Biryani masala :
Cloves - 6
Black pepper - 1 tsp
Tailed pepper - 2 tsp
Cinnamon - 2 inch
Cardamom - 6
Mace - 1 flower
Nutmeg - 1
Star anise - 3
Cumin seeds - 1 tsp
Black cardamom - 2
Fennel seeds - 2 tsp
Coriander seeds - 2 tbsp
Bay leaves - 2
Kapok bud - 1
Fry above ingredients on low flame
Blend into fine powder
Keep 1tsp blended masala for Rice preparation
For Fried onions
Sliced Onions - 400gms
For Mutton marination
Mutton - 1kg
Turmeric powder - 1 tsp
Salt
Red chilli powder - 2 tsp
Ginger & Garlic paste - 1tbsp
Green chilli paste - 1 tbsp
1 lemon juice
Blended masala
Onions fried oil - 1 cup
Mint leaves - half cup
Coriander leaves - half cup
Fried onions - half cup
Curd - 100gms (1 cup)
Marinate for 30mins
Preparation of Biryani
Ghee - 1 tsp
(Spread ghee)
Marinated Mutton
Preparation of Rice
Oil - 4 tbsp
Cloves - 4
Shahjeera - 2 tsp
Cinnamon - 1 inch
Cardamom - 4
Mace flower - 1 flower
Bay leaves - 2
Green chillies - 10
Mint leaves - 1 cup
Coriander leaves - 1 cup
