What nawab saab is saying is very true, a lot of chefs trying to change the authentic way of hyderabadi cuisine by adding unnecessary spices. Remember , a chef is good in preserving ancient methods of cooking and not destroying them. That wah re wah fellow is also doing similar bs .

Nawab sahabs passion for hyderbaabdi food is commendable. Id just like to add we too have haleem here in pakistan and its widely available more than hareesa. And pakistani food isnt just punjabi food. We have different styles of cooking from north to south, balochistan and north western pronvices have food influences from central asia they are milder flavours more meat heavy the rest of pakistan karachi sindh punjab too have varied cultures and foods so its not just punjabi style of cooking its quited varied
