OLD SCHOOL SHRIMP,SAUSAGE AND CRAB GUMBO
This is my long time recipe for gumbo
I been cooking gumbo for over 38 years and this is my most popular dish
RECIPE:
8 oz claw crab meat
1# shrimp(16/20 )
1# crab claws
1 cup diced green bell pepper
1 cup diced yellow onions
1 cup diced celery
1 cup sliced okra
2 cans diced tomatoes
1# andouile sausage
4 cup all purpose flour
2 cups vegetable oil
3 tsp gumbo file
2 quarts shrimp or fish stock
DIRECTIONS:
Place oil and flour together in pot and cook until peanut butter brown color(make sure your stir regularly so it doesn't burn)( takes about 20-30 minutes) add gumbo file and stir until mixed and set aside
In separate pot add tomatoes,sausage,celery,onions and peppers and cook until tender
add stock and simmer for 30 minutes
Add okra and cook 10 minutes
Thicken with roux to your desired thickness
season with salt and pepper
Add crab and shrimp and cook 15 more minutes
Enjoy with white rice
