📝 Ingredients:
2 eggplants
Olive oil
Salt
200 g mushroom
1/2 capia pepper
1 onion
1 tomato
2 cloves of garlic
1 teaspoon red pepper powdered
mozzarella
dried parsley
👩🍳 Preparation steps:
1.Cut the eggplants in half. Make slashes and add oil and salt.
2. Bake at 200°C - 392°F for 25 - 30 minutes.
3. Chop the onion and sauté in oil. Add the chopped mushrooms, peppers and tomatoes.
4. Add black pepper and red pepper powder. Cook for about 7-8 minutes.
5. Press the center of the cooked eggplant lightly with a spoon and add the mushroom mixture.
6. Add mozzarella on top and bake for 15 minutes.
7. After baked, garnish with dried parsley.
