hey Michael and Bridgette! My husband and I love your channel. I just wanted to share a delicious and somewhat healthy recipe for you guys any any fans who are looking for a delicious meal. Chicken stuffed bell pepper's 2 cups cooked and shredded chicken. 8 ounce cream cheese (room temp) 4 ounce cheddar cheese 4 ounce Monterey jack cheese 1 minced jalapeno 2 teasp ground cumin 1/4th cup salsa (your choice) 1 teasp salt 4 bell peppers. oven set for 350 degrees F. cook time 40 minutes covered with aluminum foil. directions: 1. cut bell pepper in half and take out seeds. 2. combine shred chicken, cream cheese, both 4 ounces of Monterey and cheddar cheese, cumin,jalapeno, salt and salsa. mix until combined. 3. stuff bell peppers with mixture and top with cheddar and Monterey cheeses. 4. cover and bake.
