How about creating family speedrun at skyrim, meaning having a house, 2 kids and a spouse. Bonus points for a spouse that is actually good for the kids. Or just bringing a premium sweetroll from solitude to jarl Balgruuf's kids.
OK so here's a more thought out challenge. Skyrim as a proper Gourmet. 1-play the dark brotherhood quest line up until you make the potage Le magnifique 2-discover a love for cooking and stop being an assassin. 3-cook one of every single dish in the game , including the baking that was added in hearthfire and the hot soups added by survival mode (survival can be activated until the very end if you want)
Beat oblivion but only let a atronach fight for you, craft any that you think is good for each quest and support it with magic, in locations where it doesn't follow you can summon one.

Get a Solitude guard to arrest you during the fight with Alduin on the Throat of the World. Preferably for stealing a sweetroll. I want to see if it is possible without cheating. Alternatively, shoot Ulfric Stormcloak in the knee, then have him chase you all the way to Solitude. You can kill any of his guards, but he has to be defeated by the guards and imperials at Solitude.

I'm reminded of a challenge my friends and I would give each other in Skyrim. It was a sort of "hide and seek" game. One friend would find a place somewhere in the world, usually outside, drop an item to prove they were there, and take a screenshot of the area. Then, they would send that to another friend and challenge them to find the place. We finally stopped after a few friends sent screenshots of places none of us could find. It was just after the Dawnguard dlc came out, and none of us knew how to mod, so the places were fairly vanilla. I guess this challenge only works if you have friends who also play Skyrim, though.

Find a way to max out all magic skills without leaving the College of Winterhold. Get an education!! (Destruction can be hard but there are some unkillable npc's)

How about trying to beat the three final bosses with only durnehviir? He counts as a summon meaning you can summon him almost anywhere (if harkon’s arena is to small you could try fighting the ebony warrior or just beat mirrack and alduin)
Do the Dark Brotherhood Questline in Oblivion without looking like one of them and as a total Pacifist (You are not allowed to kill your Questtargets you are only allowed to kill people to join the Dark Brotherhood)
