what's interesting about red velvet cakes, is that because chocolate bars were more expensive in the 1930s, bakers used raw cocoa instead. the reaction in the cocoa to the acidity of buttermilk made the batter turn more crimson. while not insanely red like known, it's still kinda cool how the chemicals reacted into a color change from chocolate brown to a rusty color.

I can see why, in 1920, 1940 there weren't many overweight people as there are today. Those cakes from 1920, 1940 are healthy compared to today's cakes. Small serves and less fatty ingredients. The 1980 cake looks good.

The 1960 contender was not a cake, more of a dessert. You should have done a box chiffon or Angel Food cake. For the 80s, I would have chosen a flourless chocolate cake, which every restaurant served a version of.

@@petercozzaglio6070 It was popular during the Ottoman Empire, so a lot of countries have their version of the Baklava (from Algeria to Iran, Turkey , Greece, Egypt, Lebanon, Israël,...) The Turkish one is supposed to be the "true" one. But my favorite is the Lebanese/Syrian one (with pistachio !).
