Eggplant is tastier than meat, not frying. Baked eggplants with minced meat and vegetables, a tasty and healthy Turkish dish. I no longer fry eggplants, but I only cook like that. This recipe will be loved by all your family. Cook with love! Cook with joy!
Ingredients and preparation:
2-3 eggplants
Peel
Cut into slices as in the video
1 liter of water
1 teaspoon of salt
Soak eggplant in water for 15 minutes
500g minced meat
1 onion
1 pepper
½ hot pepper
3-4 cloves of garlic
bunch of parsley
2 tomatoes
Soak the tomatoes in boiling water for 5 minutes, then peel off the skins
Add the ground beef
1 teaspoon smoked or regular paprika
¼ teaspoon chili flakes
½ teaspoon thyme (optional)
1 teaspoon of black pepper
1 teaspoon (8 g) salt
Mix well
60 ml sunflower oil
1 teaspoon smoked paprika
1 teaspoon (8 g) salt
Take the aubergines out of the water
Dry lightly with paper towels if necessary

Brush the eggplant on all sides with oil and spices
Place the ground beef on top
1 tablespoon (40 g) tomato paste
150ml of water
Spread the sauce over the ground beef
Cover with foil
Bake at 200C for 20-30 minutes
5-6 tomatoes

Scatter tomatoes, onions and peppers on top
Bake for another 30 minutes at 210C
