There is a famous clear spring in Kyoto called "willow water.
It is said that Sen no Rikyu used this water for the tea ceremony and Oda Nobunaga drank it in his final days.
The water is pumped up from 100 meters underground and has never run dry, and is still used today as a source of water for dyeing and drinking.
We interviewed Mr. Kiyojiro, who draws this willow water every day and has been running a Kyoto-style restaurant in this area for 14 years.
Water is the basis of cooking. The aroma of the ingredients comes out and no seasoning is needed. He says that water is so important that without willow water, there is no way to stick to it.
The famous white rice, dashi (soup stock), and refined Kyoto cuisine were all exquisite.
