Personally for me if I were a new rider a CBR300r would be a pretty good choice Decent top end at least for a 300 it will help you get used to the feel of a sport bike at lower speed and how to transfer that weight in corners I am assuming your going for sport bike mot a cruiser or Harley type Once you feel like that bike is gettting to not be enough for you a in terms of straight line speed and you feel confident throwing that around corners without worry then I would probably switch to a 600CC good one is the Yamaha R6 it’s a decent bike I have ridden a few and they are pretty good for moderate riders If you really feel the need to go to a 1000cc liter bike really do your research cause honestly that would probably be the bike you have for a long time there isn’t much going up from 1000cc in terms of sports bikes There are Ducati but they are a really pro experienced rider bike but definitely if you have the money would be a good option once you feel you would be comfortable with a 1000cc bike
