I Got A Char Griller 980 Gravity Smoker And This Happened!

Hey everyone, today we're going to talk about the Char-Griller Gravity 980, my review of it after using it for over 6 months, and how it helped me check an item off my BBQ bucket list TWICE in one weekend. To begin with I'll just say it, this smoker delivers an incredible value for the price tag. As a lot of you know I'm a huge believer in the versatility of the Akorn Kamado and while that cooker is still incredible, the Gravity 980 can do all the things the Akorn can…..maybe even with a little more ease. One thing that sets this cooker apart is it's incredible temperature range. You've got to see us to low and slow cooks, including an overnight pork butt cook over on the Char-Griller IG page and hot and fast steaks and chops here on the channel. Due to how the fire sits in between the cook chamber and the ash pan where our smoke is rising from, this cooker produces some of the cleanest smoke flavor I've ever had come out of a cooker. This really lets you test the waters of adding more smoke flavor to your food while being less likely that you'll make it bitter. The one thing that may cause an issue for you is if you want to roll this cooker through rough terrain like gravel, you're going to have to help the smaller front casters along, but to me this is a small price to pay for all of the value that comes in this package. I believed in this cooker so much that we entered our first ever KCBS pro competition with two of them. It was a double competition which meant we competed twice in one weekend, once on Saturday and once on Sunday. We were shocked when they helped us win not one category, but TWO, with a first place rib on Saturday and a first place brisket on Sunday. To say I'm impressed with the Char-Griller Gravity 980 is an understatement at this point. Honestly at the time of this video I don't know if there is a better dollar for dollar value out there. My 980 has revolutionized my backyard smoking (coming from a UDS). Running an overnight brisket and still getting good sleep makes the following evening so much more fun. Great videos, keep the tips coming.

It’s not just the cooker though, it’s you putting in the work and paying attention to everything that also was a huge component. However having a quality piece of equipment makes the effort and the learning curve SO much easier and a shorter timeframe. You’ve proven that if you master your cooker and put in the time and effort that someone can put out amazing results!! Congratulations on a great season, and I hope that I get to see you out there again!!

i just got the gravity 980 and did my first cook on it last night. smoke flavor was amazing compared to my rectec pellet grill. I love i can have the convenience of a pellet grill but burn real lump charcoal and chunks of wood

Great video as always Coach! As someone who has co.oeted week in and week out with you, I can confirm how great the 980 is. I was worried when you first switched, but once you got your systems and timelines figured out.. these smokers shined!

I really like your videos, and love this smoker...I actually have two if them and a Masterbilt 560 I compete with in the Backyard KCBS I have competed in one in the SLBS and have gotten calls in every contest.

So I've been subscribed on my main account for months, you and a few other youtubers are what convinced me to get a chargriller 980, and it made me want to start a youtube channel as well. I just posted my first video on smoking Dino Ribs and I would love your opinion on it, I'm just a weekend smoker who loves to do it, no professional ha. And thank you for trying out the chargriller and posting the videos, which made me want to get one!

Great review. I wondered if anyone was using it for competition. Just curious, how is the flap holding up? Mine finally warped and is not holding the temp. I set it for 200 and it runs at 275. I have the replacement but I saw on some forums that some people are using BBQ mats and making their own. I ordered a Kona mat and I am going to use the replacement as a template. The Kona is supposed to be good to 600 degrees. I wish someone would make a metal one. I will be the first in line to purchase one. Looking forward to your next 980 review.

I use the MBGF 1050 amd the same principles apply . We were fortunate enough to win out 1st comp using the technics you teach ! Thanks for sharing your knowledge! Do you use a battery pack for power ?

I love my 980 only if the Wi-Fi and Bluetooth would stay connected it would be even better.

I’ve never actually even set up the WiFi, my Bluetooth works though. Having two of these things I wish I could connect both of them to the app at the same time. That being said boy can these things throw some bbq. Honestly way better than what I thought it could do when I first got it. Thanks for watching 👍

@@Cookoutcoach how do you get around the bluetooth range? I have had to use my bluetooth inkbird because the range is so terrible on the 980.

@@ryanwatson6911 I dunno, I’ve never tested how far the range goes but I’m only ever about 25 yards away and it works out to that distance for me through walls

@@ryanwatson6911 depending on the range you need you could get a bluetooth repeater, they are usually 30-50 dollars on amazon. i disabled the notifications about the grill getting disconnected and that seemed to help as well

Can you do a video of how you set up your charcoal hopper with the wood chunks. I'm having a hell of a time getting clean smoke. Even with 1 chunk the smoke is never really clean.

Sure can, that’s interesting though your smoke should clear up fairly quickly, are you using briquettes or lump and what temp are you running

@@Cookoutcoach I run lump and have tried temps from 225 to 275. The dirty smoke is only a issue when running chunks in the mixed in the hopper with the lump. I had the masterbuilt 560 early on and it would do thin blue to clear all day so the 980 is just weird to me. I don't know maybe I'm expecting to much in wanting thin blue but even still at times it'll just bellow thick smoke say if it over shoots so the fan doesn't run to get temps down. I'm not a novice to backyard bbq. Have ran WSM, kettles, offsets. I really wanted the 980 but I haven't even used it in more than a month because every time I use it I end up fighting the dirty smoke with wood in the hopper so I just take it off and put it on another cooker. What's worse everyone else loves it and I guess get clean smoke so I'm like am I crazy LOL. There's been a few in the Facebook group who've said the same as me but for the most part it's loved so I have to be doing something wrong.

@@hinds90 Make sure your wood is completely surrounded by Charcoal. The wood is in the hopper, centered and not resting against firewindow. Also make sure your wood is not above the oxygen level, which is about 1 inch above firewindow. Stacking wood above firewindow is putting it into the CO2 zone and makes said wood turn into Charcoal, emitting bad smoke, creosoles and other nasties.

After watching your reviews on this which I purchased a brand new one today for $300, the 980 vs. the Akorn? Both have more of a designated purpose but your opinion, what’s your preference?

For 300 the answer was definitely the 980 hahahaha that’s a steal. But in all seriousness what I tell people is if you want to actually mess with the fire, get the akorn, if you don’t care about that, get the gravity. They’re both incredibly capable cookers though.

@@Cookoutcoach this makes 5 operations to work on. Every grill/smoker has its place. I’ve had amazing things come off a green egg but I won’t spend that price. And mobility is a thing same as for you. I’m typically an indirect but I also feel it would be amazing for poultry, wings, spatchcock chicken, duck, and Turkey.

Did you do the mod where you plug up the hole on the left side of the fire tube with a hunk of aluminum foil? I have been told this is a must. What’s your opinion ? I heard that hole lets warm air hit the chamber temp probe and give false Readings.

Great question, so when I’m doing a long cook like brisket or pork butts I’ll usually go ahead and fill it all the way up, for something like ribs I’ll fill it about half way, and for a quicker cook like chicken I’ll fill it right above the fire bricks which is about a quarter way full. Hopper is in great shape, it’s technically triple walled and you could pull the inner sleeve and replace it if you needed to

Just seen your video on this smoker. Not much information though. I would like to know if it holds an even temperature??? I have the pit boss 820 but temperatures are not even across the grill.

I love this grill but I can't get good clean light blue smoke at low Temps. Anything below 350 degrees I get a thicker white smoke. Food isn't tasting horrible but I know someone might know why or how to help !

Wow that is a problem, firstly if you’re not already I would try switching to lump charcoal, then after that it’s time to experiment, so start with just two chunks of wood in the ash pan and see how the smoke looks

@@Cookoutcoach I have tried both briquettes and lump. Does it both at low Temps. I'm talking about then charcoal itself mostly. Without wood it's a thicker white smoke. Like if I was to open the hopper it would just be really thick white smoke also. Can't even see the charcoal. But it's like it just smolders and doesn't burn clean at low Temps.

Since having cooked on Gravity 980 for about 6 months, do you have a comment on adding wood chunks into the hopper vs. adding them to the ash pan? Does one method give you better flavor versus the other?

To me they both give the same flavor, but if you add to the hopper you can add smoke quicker than in the ash pan, in the ash pan I give it about an hour to really get those chunks smokin

I will say I talked to cs at chargriller and they said adding wood to the ash pan can lead to the flap getting too hot

Have you ever put brisket fat trimmings in the firebox? I watched either mad scientist or chud and it seemed to give even better flavor. I’m wondering about using the last minute smoke technique you had for chicken but with trim on a brisket.

I think coach touch on something about that when he said the drippings falls on the deflector and burn back into the meat. Also fat trimmings might not work too well on the 980 because it could create a large flame in the firebox that can burn the flap.

Did you have an issue with the fan flap? I’ve had my 980 since may and the fan flap burnt up recently luckily It was after thanksgiving. The fan flaps are on back order so I’m stuck without my smoker.

I did, so I looked in to check, saw it was a little crinkled, touched it and it broke. They sent me a replacement quickly, and in the meantime, not saying this is a good idea, but I regulated the temp by closing the fan cover and holding it just a little open with a piece of cardboard….🤷‍♂️. Good news is once I got the new one it was easy to swap and went back to working like it always did.

Char Griller will not honor the warranty for the 980 Gravity. Can't directly contact Char Griller and they are very slow to respond to warranty claim. Unit went down within 6 months of purchase, Char Griller eventually said they would send replacement parts but its been 2 months and instead of grilling I'm eating "take out" chinese food. My advice, don't buy this grill unless you want to eat a lot of "take out".face-purple-crying
