HA, an awful but lovely problem to have! If you have any questions about recommendations I'd be happy to help, I have the mini6 and the bible-size and I use them for different things.

They make some excellent papers for that 😊

Unfortunately not, but I do all my layouts in InDesign. There's a grid generator that I use here to make the grid portion - incompetech.com/graphpaper/lite/ and then I lay the text and lines over top of that grid in InDesign. If you're doing dated pages and binding it yourself, InDesign has a print option that will print your pages in the correct order for a bound book with signatures. It's too complicated for your average RU-vid viewer so not worth making a tutorial (also it would be really long!) but for someone who is tech-adventurous it's not too terrible to figure out on your own. :)

I don't have this problem at all but I suppose it depends on how hard you are on your binder. It does have six rings instead of three though, so I'm assuming the additional stability prevents the paper from shifting so much and putting stress on the holes. If you want to try it but don't want to buy an expensive binder until you're sure you will like it you can get clear plastic ones SUPER cheap on Amazon. I don't like them because you have to force them to lay flat, but just for the purposes of trying it out they're a great option.
