For the first one, I believe it may only be in bedrock edition but the leather boots actually don't just shield your fall, they make it to where you can walk on top of powdered snow

You don't have to build Nether Portals so big they can be the size you see them when you go in the nether or when you look at your portal when you come out of it just make the one in the Overworld the same size
